This Healthy Curry Chicken Salad is my latest twist, and you won’t believe how easy or how flavorful it is to make. I’ve used Greek Yogurt to lighten it up a bit, and I think you will agree that there is no sacrifice with this one!

You can eat this Healthy Curried Chicken Salad by itself or serve it in lettuce wraps or on top of a green salad. I also like to toast gluten-free bread and make a sandwich or use a wrap to make a chicken salad wrap.

Low Fodmap Curry Chicken Salad; Gluten Free

You can, but I recommend straining it in a cheesecloth lined fine mesh strainer for best results. Otherwise, this healthy curried chicken salad recipe will come out watery.

To make a Vegan Curry Chicken Salad, use cooked and cubed tempeh or Gardein Chicken in place of the chicken. Use dairy-free Greek yogurt for the yogurt and Veganaise in place of mayonnaise.

This Curry Chicken Salad recipe is the best chicken salad I’ve ever had. There’s no way I’ll be going back to regular chicken salad! Curry powder, mixed with creamy mayo, crunchy celery and red onion, juicy and moist shredded chicken, gets laced with honey, lemon, and mustard. It is an explosion of flavor and texture in one little bite!

This recipe is perfect for meal prep! I like to make a batch at the beginning of the week and serve it with lettuce cups or tortillas for lunch. It’s perfect for low carb and keto diets, and if you use a compliant mayonnaise it is whole30 friendly as well!

Mix all of the ingredients together until they are well combined. Add a little salt and pepper to suit your taste and enjoy!

Don't forget to follow @the.I originally shared this curried chicken salad on my salad column on Serious Eats in 2011.  All these years later, it is still one of my favorites. Savory, sweet, and a little spicy – with lots of fresh crunch from grapes, cashews, celery, and scallions – it is wonderful over greens or piled into a sandwich. The creamy dressing is flavored with curry powder, a blend of spices like coriander, cumin, turmeric, ginger, cinnamon, and cardamom, to name just a few. I recommend using poached chicken to make the salad, but roasted chicken breasts or rotisserie chicken work well too.

As mentioned above, I use poached chicken for this recipe — it’s easy and the method yields super tender chicken. If you’d prefer to use roasted chicken, you’ll need 3 pounds bone-in, skin-on chicken breasts. Preheat the oven to 425°F and line a baking sheet with aluminum foil. Arrange the chicken breasts skin-side up on the prepared baking sheet, and coat them with 1 tablespoon of olive oil and sprinkle with salt and pepper. Roast for 30 to 35 minutes, or until done, and then let cool.

Add the chicken, celery, grapes, scallions, cashews, and a pinch of cayenne pepper, if desired, to the dressing (if not serving immediately, hold off on adding the cashews so they stay crunchy).

Toss well, and then taste and adjust the seasoning, if necessary. (If using a rotisserie chicken, be careful when mixing so that it doesn’t fall apart too much.)
