Easy Instant Pot recipes are my go to during the busy school week. As a busy mom of two little ones, I don’t always have time to prep ahead when it comes to dinner. That’s why I am such a big fan of the Instant Pot and use it regularly at our house.
This Lemon Garlic Chicken is tender, juicy and full of flavor. I just love the combo of lemon and garlic with chicken.
Slow Cooked Keto Creamy Tuscan Chicken
The acidity in the lemon brightens up the flavors so much in this dish. And the best part about this recipe? Dinner can be on the table in just 30 minutes with the help of a trusty pressure cooker.
You’re going to off by seasoning the chicken with some salt, black pepper and garlic powder. I used chicken thighs here but this dish would be delicious with chicken breasts as well.
Next, you’re going to brown the chicken in the Instant Pot using the sauté function. Searing the chicken helps to seal in those amazing flavors and gives the chicken that crispy coating. Transfer to plate then add the butter, onions, garlic, lemon zest, lemon juice, Italian seasoning and chicken broth. Swap out the chicken broth for heavy cream for a rich and comforting version of this dinner favorite.

Chicken is such a dinner favorite around here. And I love chicken thighs for their healthy fat content! I always eat the skin to get more of that precious collagen from natural sources.
Keto White Chicken Chili (instant Pot Or Slow Cooker)

1 – Prep: To prep, chop a small onion (do really use a small one to keep this low carb, or use half of a medium one) and mince some garlic.
2 – Brown the chicken: Set the instant pot to “sauté” and add oil to the inner pot. Brown the chicken well on the skin side, then flip and brown on the other side for a couple of minutes, too.

Remove the chicken from the pot and set aside on a plate (it doesn’t have to be cooked through at this point).
3 – Start the sauce: To start the sauce, add the onion and garlic to the hot pot and sauté until softened.
Secure the lid and set the valve to the “sealing” position. Choose “pressure cook” (or “manual” on older models) and “high” for 12 minutes.
Instant Pot Chicken And Cauliflower Rice Soup (low Carb)
Pressure cook for 15 minutes instead of 12. Check the meat for doneness, if it’s still raw in the middle close the lid again and cook for another 2-3 minutes.
Please note: Do not stack the chicken if frozen/make sure the thighs are separated. If that’s not possible/they’re totally stuck together, your thighs may need longer to cook.

Keto Instant Pot Crack Chicken

Instant Pot Butter Chicken is naturally low carb so we didn’t have to make any changes. Though a lot of recipes add cornstarch to thicken their butter chicken sauce it isn’t necessary. Setting your Instant Pot to saute after it has finished pressure cooking, will thicken the sauce up perfectly! If you are new to using an Instant Pot check out our post on How to Use an Instant Pot .
Instant Pot Queso Chicken (keto, Low Carb)
The short answer is yes, BUT the dark meat gives this recipe so much more flavor, and it is even more moist and tender. I highly recommend using dark meat if you can.
