BROCCOLI RAMEN NOODLE SALAD — Just dump all the ingredients for this unique salad into a big bowl, toss and refrigerate, and you’ll have a tasty salad that’s perfect for potlucks and backyard barbecues.

If you’ve been to a potluck any time in the last 15 years, you’ve probably had some version of this delicious Broccoli Ramen Noodle Salad.

And there’s a good reason for that! It’s a super simple salad to throw together, can be made ahead, and is always one of the first dishes to disappear when I bring it anywhere.

There are so many versions of this ramen noodles salad out there, but this one, with it’s assortment of crunchy vegetables, is my all time favorite.

Of course, you don’t have to the veggies listed in the recipe, so feel free to use up whatever you have in your refrigerator.

And while many ramen noodle salads call for toasted almonds to add some crunch, I’m kind of partial to the salty, toasty sunflower seeds in this version.

Like any good potluck dish, this salad serves a crowd, so if you’re just making it as a side for your weeknight dinner, you might want to half the recipe.

Just make sure you don’t discard the seasoning packets from your noodles. They actually go into the dressing and add tons of flavor to this salad.

You do need to allow this salad to rest in the refrigerator for a few hours to soften the noodles, so you’ll need to do a little bit of planning ahead.

Leave the Ramen noodles in small clumps to give some of their texture to the salad. You don't want to completely pulverize the noodles into little bits.

To make the dressing, stir the contents of the flavor packets from the Ramen Noodle packages together with vegetable or canola oil, granulated sugar, white vinegar, and teeny bit of sesame oil.

Cover the salad and refrigerate it for 24 hours. This 24-hour chill time allows the Ramen noodles to soften as they soak in the salad's dressing and lets the salad's flavors beautifully meld together.

At serving time toss everything together, dispersing the softened Ramen noodles throughout the salad and getting everything good and coated in the dressing.

Have you ever had Ramen Noodle Salad? I’ll admit I thought it sounded a little strange when someone brought it to a friend’s barbecue but after I took that first bite I was sold! Now it’s one of my favorite salads!

This easy side dish is made with Asian ramen noodles which are added raw so they are crunchy, and totally addictive! The dressing is salty, sweet, and tangy all at once. It really brings the whole dish together.

Broccoli Slaw Great For Potlucks Or Cookouts

Step 1 – Assemble the Salad – Place the broccoli slaw, broccoli florets, red cabbage, Ramen noodles, sunflower seeds, and green onions in a large bowl and toss together.

Step 2 – Make the Dressing – In a separate bowl, whisk together the olive oil, rice vinegar, sugar, soy sauce, and both packets of ramen seasoning.

Step 5 – Let the salad set – Cover your salad tightly and place in the refrigerator for at least 1 hour. (Keep reading to find out how to make it ahead of time!)

We like crunchy noodles for salad so in this recipe we add our noodles last so they don’t absorb too much liquid and become soft. I love that super crunchy, almost crouton-like addition to my salad. Some people like them to sit in the dressing for longer so they absorb more flavor and soften slightly. This is a personal preference and you can do whatever you like best.

Since the liquid isn’t hot it takes awhile for the noodles to really soften so if you want to mix the salad up and let everything meld together for a bit go for it! You can make the salad the night before and let it sit in the refrigerator overnight. I suggest serving it within 8 hours for the best results.

You can add so many things to this ramen salad recipe. It all depends on your personal taste. You can also sub out some of the broccoli slaw mix for shredded green cabbage.
