Caramel Brownie Bars Recipe

Delicious oatmeal and caramel Brownie Cookie Bars start with a rich, fudgy brownie base topped with chocolate chips, a creamy caramel layer, and an oatmeal cookie crumble to finish them off. These “brookie” bars (brownie + cookie) make for a rich, indulgent, and fun treat.

Chocolate? Yes, this is one crazy mash-up dessert! Since brownies and carmelitas are two of my all-time favorite treats I thought it would be fun to combine the two into one fun dessert bar. And fun hardly begins to describe these bars — they’re gooey, fudgy, chewy, and chocolatey. They’re rich and caramelly — these bars are the ultimate treat!

And, while considering there are four layers, it might seem like a lot of work, these bars are surprisingly easy to make. To keep things simple, we use a brownie mix for the base. The chocolate layer is simply a bag of chocolate chips and the caramel layer isn’t made from scratch either — we’re using packaged caramels. The oatmeal cookie topping is made from scratch, but I promise, it’s quick and easy!

Cake Mix Caramel Brownies Recipe

We begin with a boxed mix for this recipe. Brownie mixes are delicious and convenient, especially since the goal for this dessert is quick and easy. If you want to make your brownies from scratch, use your favorite brownie recipe in place of the mix in this recipe (Just make sure it fills a 9×13-inch pan).

My personal favorite mix for this recipe is Betty Crocker’s® Fudge Brownie Mix (18.3 ounces). There are different versions of that mix, so make sure to get the 18.3 ounce mix that will fit in a 9×13-inch pan. We slightly under-bake the brownies, because they’ll go back in the oven layer!

Right on top of the brownies, we add an entire bag (about 2 cups) of chocolate chips. Use any chocolate you like — milk, semi-sweet, dark chocolate, or even white chocolate for a unique flavor twist. We prefer milk chocolate, but it does make these bars quite sweet. If you prefer less overall sweetness, I’d stick to semi-sweet or dark chocolate.

Last, but not least, we make an oatmeal cookie crumble topping. The crumble has fairly standard ingredients — flour, oats, butter, sugar, salt, baking soda, and vanilla extract. It’s easily prepared by stirring everything together in one bowl until it forms a crumbly topping.

Note 1: Brownies: We usually use Betty Crocker’s® Fudge Brownies. There are different versions of this mix, so make sure to get the 21-ounce mix that will fit the 9 x 13-inch pan.

Note 2: Caramels: I recommend Werther's® SOFT (not chewy) caramels for this recipe. If you can't find this size bag, grab 3 (4.51 ounce) bags and use 2 full bags and 5 caramels from the 3rd bag.

Who is ready for gooey, fudgy, over-the-top CARAMEL BROWNIES?! These are coming just in time for Valentine’s Day, because I’m pretty sure that brownies stuffed with caramel are the way to everyone’s heart.

I rank brownies as one of my all-time favorite desserts. I love playing around with different flavor combinations like Cream Cheese Brownies, Peanut Butter Brownies, and Nutella Brownies And now we have Caramel Brownies in all their sweet and salty, ooey-gooey perfection.

Dairy Milk Caramel Brownies

Semi-homemade: Although the brownie portion is homemade this recipes takes a shortcut for the caramel layers by using store bought caramels. More on this below.

This recipe uses individually wrapped caramel candies that can be purchased in the baking or candy aisle of the grocery store. I’ve made this recipe with both Kraft Caramels and Werther’s Soft Caramels.

The caramel candies are melted and combined with cream to form a caramel sauce with the perfect consistency. It is thick enough that it doesn’t ooze out or soak in to the brownies, but it is thin enough to bite through without being tough and sticky.

Serve: Serve at room temperature or slightly warm (when they are extra fudgy and gooey). You’ll most likely want to serve them on a plate with a fork. The colder these are the firmer they will be.

*I have tested this recipe with Kraft Caramels and Werthers Soft Caramels. Do NOT use store bought caramel ice cream topping/sauce, it will be too thin.

Caramel + brownies in itself isn’t an original idea and if you do a Google search, you’ll find plenty of examples. And I would have used an existing recipe if I found what I was after, but every recipe I came across:

3. Required a candy thermometer to get the caramel to the exact temperature so it would soft set, rather than ending up runny OR cooking it too far so it ends up like hard toffee.

And here’s what you need for the creamy caramel. The key ingredient here is sweetened condensed milk, which is cooked on a low stove until it changes from white to pale golden ➔ ie. caramel!

Golden syrup is a little cheat ingredient to give the caramel a little boost of extra caramel flavour without the caramel cooking for so long it becomes super-thick, like a peanut butter consistency. We need the caramel to be a pourable consistency so we can pour it over the brownie batter.

Golden syrup is a gold-coloured syrup that’s common in Australian and British baking. If you don’t have it, no need to fret, hunt it down or even bother making it – just use maple syrup instead, which works a treat.

It’s sweet. It’s rich. It’s indulgent. This one is not for the faint-hearted or “I’m-not-really-a-sweets-person” types! It is for die-hard chocolate and caramel lovers – and everyone out there who just feels they deserve a treat.

1. Chocolate – You must use baking chocolate which you will find in the baking aisle at supermarkets. Not regular dark chocolate made for eating! (Well, you can eat the baking chocolate if you want 😉 )

2. Golden syrup is like a cross between honey and molasses – it is thick and sweet but not as thick as molasses. It is mainly used for colour in this recipe so you can substitute with maple syrup, or even leave it out.

3. Caramel –The condensed milk has a tendency to catch on the bottom of the saucepan which will result in golden bits distributed throughout. Don’t despair if this happens, you will barely notice it once baked. But you do need to whisk consistently to ensure you don’t end up with a sticky, burnt mess in the saucepan!

4. Baking time – The bake time is slightly longer than when you are making a plain brownie because of the caramel layer, which causes the brownie to take longer.

5. Measures – Tablespoon and cup measures differ from country to country. For this recipe, the difference is not enough to impact it. I have made it with both US and Australian measures (the two countries at the extremes in difference) and could not tell the difference. The only exception is Japan – please use weight measures provided (your cups are far too small).
