The ONLY way we love our bolognese is cooked in a slow cooker or crockpot. With meat so incredibly soft and tender, it falls apart all over your pasta.
Simple Slow Cooker Bolognese Recipe
This family recipe makes enough to freeze any left overs for any emergency dinner situations, OR enough for the next day. Just boil up some more pasta and you have a restaurant quality meal two days in a row! NO COOKING! Well, except for boiling the pasta, which is simple itself. OR, do what we do and use the leftovers to smother ALL over toast.
What I have found over the years of making this sauce is browning the meat first before adding it into the slow cooker tastes incredible. I used to throw it all in the slow cooker without browning the meat first, but we had an aversion to the ‘stewed meat’ flavour.
The sauce is so versatile, you can serve it over pasta, like the spaghetti pictured here, BUT I usually opt to serve this sauce over zucchini noodles, or steamed vegetables such as broccoli, cauliflower, and pumpkin when following a low carb diet or calorie counting.

To freeze: cool completely before transferring any remaining sauce into air tight containers. I use disposable containers since the sauce tends to stain. Nutrition information is based on per serve out of 9 serves. The recipe states serves 8, but you will have about 2 serves of left overs!

The meat becomes so tender and soft, it literally melts in your mouth. The sauce is silky and rich, and clings lovingly to the pasta, staining the long strands a deep red.
For Bolognese sauce. Or maybe Spaghetti Bolognese was made for slow cookers. Doesn’t really matter. They’re a match made in heaven! :-)
Slow Cooker Bolognese Recipe
Now I have to tell you, this is a real proper authentic Bolognese recipe. So it’s not a “chuck it all in the slow cooker” recipe. Softening the onion and browning the beef before transferring it to the slow cooker is a key step, it can’t be skipped!
It just so happens that my slow cooker has a sauté setting – very handy for browning before slow cooking. However, when I make Bolognese Sauce in the slow cooker, I always make a double batch using 2 lb of ground beef. So if I were to brown the beef in the slow cooker, I’d have to do it in batches anyway because otherwise it would be (very!) overcrowded and the beef would end up stewing instead.
So I just brown the beef in a large skillet then transfer to the slow cooker. Well actually, I brown the onion first then transfer that into the slow cooker, then I brown the beef. Simply because of sheer volume – I don’t have a skillet large enough!

3. This step of tossing the pasta with the sauce and some of the pasta water is called emulsifying and it's when the magic happens. The oil in the sauce and the starch in the pasta water come together to make the Bolognese Sauce thicker so it clings to every strand of the pasta. This is the proper Italian way of making pasta!

It makes a large batch of delicious bolognese sauce which you can use for for traditional spaghetti bolognese, lasagne or any other Italian style mince dish.
I like to brown my mincewith the onionin a frypan before adding it to the slow cooker.Once this is done I add the rest of the ingredients, I like to cut up my mushrooms quite large so that it is easier easy to remove for my fussy young kids.
Another trick I like to do is blend one of the cans of diced tomatoes with half a bag of baby spinach, this is a great way of hiding vegetables and you wouldn’t even know the mince had spinach in it. I also like to grate the carrot and onion which makes it very small, especially once it is cooked in the bolognese sauce all day.
Slow Cooker Bolognese Meat Sauce
Once all of the ingredients are in the slow cooker or crockpot then simply add a tablespoon of Italian herbs and put it on low all day or high for at least four hours.Make sure you test the flavour of your bolognese sauce and add extra salt and pepper if needed. Sometimes even a small pinch of sugar is great way to balance out the flavours.

What can I do with the leftover bolognese? I serve my family spaghetti bolognese the first night I make it, then I use the leftover mince to create two medium size lasagnes which I layer up and then freeze. When I need a quick meal, I simply bake one of the lasagnes from frozen for one hour and 20 minutes at 180°C fan bake until golden and bubbling.

Do I have to brown the mince first? While this step isn't essential, it is recommended. Browning the mince before putting it in the slow cooker ensures that there are no clumps of meat at the end. It also intensifies the flavour of the meal.
