So if you want these potato wedges you are going to have to make them yourself with this favorite menu item copycat recipe.
You really can make KFC Potato Wedges from this popular fast food joint. These potatoes were a longstanding menu item that everyone loved.
Kfc Copycat Potato Wedges (air Fryer Method)
What makes this recipe the best? It is the double battering of the special blend of herbs and spices, and the double frying method, this way you get all of the flavor and all of the crispness just like KFC!
If you have never tried these before, they are a lot like Jojo potatoes, but they are sliced thinner. I think their wonderful coating really adds to the flavor of the potato. These cook quickly, and these have so much more flavor than plain French Fries.
For this recipe, we are actually going to cook the potatoes twice. These potatoes are deep-fried, so if you are making fried chicken, fried fish, or even onion rings this would be a great addition to the other recipes.
Homemade Kfc Potato Wedges
When you buy frozen French fries, or when you buy French fries in restaurants they come par-cooked. So they are already partially cooked. When they are fried just before serving they are getting cooked for the second time. So we are going to duplicate this at home.
When you cut these potatoes into thin slivers you are going to soak them in water. This will knock off some of the excess starch. This will keep the potato flesh from browning too much.
If you have ever fried French fries at home without soaking them the potatoes will turn a brown color. So by soaking the potatoes, you will duplicate what you get in the restaurant.
Oven Baked Potato Wedges (with Secret Step)
When you fry these potatoes, I suggest plain vegetable oil, you could use peanut oil or soybean oil, but my personal preference is basic vegetable oil.
I personally use a fryer when I fry food, but you can prepare these KFC potato wedges in a dutch oven or even a plain old cooking pot. I just make sure there is plenty of oil so the potatoes can be fully submerged, and do not fry too many at once.
350 degrees is the optimal cooking temperature, so you may want to use a candy thermometer to make sure you have the temperature right. Too hot, the oil will smoke, and if not hot enough, the potatoes will soak up the oil.

If you are one of the wedge fans that are out there, you can still enjoy these potatoes anytime you like! These crispy potato wedges are simply seasoned and can be put together in no time at all. Leftover fried potato wedges are best kept in an airtight container in the fridge for up to five days. You will want to reheat these in either an air fryer for about 5 minutes at 350 degrees or in a 350 degree hot oven for 8 to 10 minutes. This way they will be crispy when you enjoy them for the second time!

Seasoned Potato Wedges
These wedges take a little more effort than traditional potato wedges but it’s so worth it in the end! They are quick and easy to cook in the air fryer, and way less messy than traditional deep frying. They come out perfectly crispy and the seasoning is just too good!
Serve them up as an appetizer or side for one delicious bite. You’ll be so pleased you skipped KFC and made these at home instead!
First, grab two equally sized Russet potatoes. Then, you’ll cut them into equal sized wedges. Here’s a good graph on how to cut potato wedges. Make sure the wedges are of similar size so they cook evenly.
Kfc Is Discontinuing Potato Wedges And Adding Secret Recipe Fries
Then whisk your egg and milk in a medium sized bowl. Place your potato wedges in the bowl and coat them with the mixture. Set aside.
Next, in another medium bowl, combine your flour, seasoning salt, garlic powder, paprika, and black pepper in a bowl and stir until combined.
Next, take your potato wedges and coat them in the flour mixture, making sure all sides are covered. Shake off any excess flour.
Kfc Is Replacing Potato Wedges With A New Side
Once your wedges are coated, it’s time to place them in the Air Fryer basket. Spray the bottom of the Air Fryer basket with oil so your wedges won’t stick. Then lay them in a single layer on the air fryer basket.
Close the air Fryer and set the temperature to 360 degrees Fahrenheit for 22 minutes. After 11 minutes, open your Air Fryer. If you see any spots of flour on these side of the wedges, spray them with oil. Then, flip your wedges and spray this side with oil. Close the air fryer and cook for the remaining 11 minutes.
To get the fluffiest and crispiest potato wedges, you will need to use a starchy potato. I love to use Russets and Yukon Gold will work well too. It’s best to avoid waxy potatoes like reds and fingerlings, they will still come out well, but they won’t have that soft fluffy middle.
Potato Wedges, How To Make Potato Wedges
There’s no need to pre-cook the potatoes, just wash and dry them before cutting them into wedges. I love that you don’t have to peel them!
It’s defiantly best to use some oil, it will help the wedges to cook more evenly and will help them to get crispy and brown. If you don’t spray them with oil, the flour coating can remain quite dry. You’ll need a lot less than traditional deep frying for sure though!
It’s best not to use an aerosol spray for the oil, like PAM, as this can damage the coating of the air fryer basket. Instead, use a pump spray bottle for a nice even coating. For best results, use a high heat neutral oil like canola, vegetable, peanut, or avocado.
Kfc Potato Wedges
These seasoned potato wedges are great right out of the air fryer, but if you have leftovers don’t throw them out! One of the reasons I love the air fryer so much is because it reheats so well!
Cooked wedges can be stored in an airtight container in the fridge for up to 3 days. To reheat them, preheat the air fryer to 380F and cook them for 3 to 5 minutes, shaking halfway through. They’ll come out perfectly crispy and taste as they’ve just been cooked!
