Vegetarian Mexican Inspired Stuffed Peppers Recipe
The color of bell pepper that you buy is completely up to you. Green tend to be less expensive, but also not as sweet and delicious in this recipe. I typically mix it up with some red, yellow, and orange.
In this recipe, I use four bell peppers, cut in half from top to bottom and then stuffed totally full with the filling. Doing it this way, you are likely to have a little filling left over, depending on the size of your peppers.
An alternative is to buy an extra pepper (for example if you have five big eaters in your house), and just cut the tops off and fill them full.

My recipe for taco seasoning contains instructions for making a big batch or a small amount. We always have a large container of it on hand because we use it so often in Slow Cooker Taco Soup and Instant Pot Chicken Tacos.
Mexican Stuffed Peppers
When making stuffed peppers, I often use microwaveable rice. It’s such an easy solution that makes stuffed peppers much faster. Other options would be Minute Rice or making the rice ahead of time.
You are looking for about 2 cups of rice, so whatever method you choose, you should end up with delicious stuffed peppers.
I love using frozen corn in recipes because it is actually already cooked. It typically can be thrown in at the last minute and the heat from the dish will warm it perfectly.

Taco Stuffed Peppers
Roast the peppers – Roast the pepper halves in the oven. This will give them a head start on the cooking time so that they don’t need to bake nearly as long once you add the filling. I find everything cooks more evenly this way. When you take the peppers out of the oven there will likely be liquid inside them, pour it out
Make the filling – Sauté the onion and crumble the ground turkey and spices together until the turkey is cooked through. Add in the beans, corn, green chiles and either salsa or enchilada sauce. Stir everything together and the filling is ready.
Stuff the peppers – Divide the filling evenly into the pepper halves. Bake them for 10 minutes then pull them out and top with shredded cheese. Bake until the cheese is melted and then serve.

Make and bake the stuffed peppers as directed in the recipe. Let them cool completely and then wrap them individually in plastic wrap and put them in an airtight container or freezer bag. You can also put them in an a casserole dish and freeze them all together. The peppers will keep for several months in the freezer as long as they are wrapped properly.
Ground beef, bison or ground chicken will all work for these taco stuffed peppers. For a vegetarian option try vegetarian meat crumbles, rice, extra black or pinto beans or crumbled tofu. If you use tofu be sure to buy extra firm and press it beforehand to squeeze out the liquid.
Par-cooking the peppers before adding the filling ensure that they’re cooked evenly. If you like the peppers to be more crisp then you can skip this step. You will still likely need to increase the baking time to 40-45 minutes.
