Recipe For Hellman'S Mayonnaise Potato Salad

There is nothing like this an Hellmanns potato salad to complete a cookout spread! The easy creamy potato salad is cool, delicious and goes perfectly with BBQ and picnic foods.

Having a good easy homemade potato salad recipe on hand is essential in barbeque season.  After all, while potato salads are incredibly common, the best potato salad is a side dish everyone at the cookout wants on their plate.

I'm going to show you how to make potato salad with mayonnaise (It's quite easy). I used The Original Potato Salad recipe, from Hellmann's,   as a template for my own version of the creamy potato salad recipe.  Here is a video I put together to show you how simple it is to make this easy potato salad, that everyone will love (printable recipe below).

Classic Potato Salad Recipe

In my humble opinion, Hellmann's mayonnaise is an ideal ingredient to ensure a rich creamy potato salad.  I have been using the Olive Oil variety of Hellmann's mayonnaise on a regular basis (either that or Hellmann's Light).  They have recently made an adjustment in the recipe for the olive oil version.  Hellmann's Mayonnaise Dressing with Olive Oil now contains 50% more heart healthy olive oil while still remaining lower in calories than most mayonnaise products (60 calories per serving).  I also like that the company uses cage free eggs in the production of their mayonnaise.  Since I have been featuring a good number of gluten free recipes here on Mom Foodie, I also would like to point out the Hellmann's mayonnaise is a gluten free product.

While I love this potato salad just the way it is. You can amp it up a but with one or more of these simple variations.

It is an easy and classic side dish for cookouts and summertime meals. I have eaten many different types of potato salad and have liked almost all of them. It is a dish I make several different ways at home, order out a lot and even buy prepared from the grocery store.

There are versions of potato salad with mayo or without and served warm, room temperature, or cold. Until I met Lee and ate it at his aunt’s house I’d never had it made with mashed potatoes, but that is how Aunt Betty made it. She would use leftover mashed potatoes, mayonnaise, mustard, red onion, sweet pickles, hard-cooked eggs, and a little sugar. There may have been other stuff in there but I am not sure. Now that is a good use of leftover potatoes if you ask me.

While I do like some versions of potato salad better than others the classic potato salad recipe is my favorite. Just a few ingredients and really easy to make. I may or may not have eaten leftover cold potato salad right out of the fridge for breakfast the following day 😉.

Hellmann’s Mayonnaise– this is personal preference, you can use your favorite brand of real mayonnaise. You can even use Spin Blend or Miracle Whip, whatever is your favorite. And, if you want to make this vegan you can use your favorite brand of vegan mayo.

Onion– I like yellow or white onion, whichever I have on hand. You can use a red onion or green onions if you want.

Hellmann's Potato Salad (best Original Recipe)

Waxy potatoes such as new potatoes or fingerling potatoes work great too and are sturdier than other varieties. You just cut them into roughly the same size chunks and boil them until they are fork tender.

It is also personal choice as to whether you peel the potatoes or not. There is a lot of valuable nutrition in the skin so I almost never peel them and never do if I am using small potatoes. I have noticed when using large red potatoes that sometimes the peel comes off the cooked potatoes and is just floating around in the potato salad. So if using red potatoes I usually peel about half of them.

This is a simple recipe only using a few ingredients. But potato salad is sort of a blank canvas that can be changed up or embellished in many different ways.
