This recipe is such a great way to prepare firm-fleshed white fish. While I generally prefer bold-tasting fish such as salmon and tuna, this is actually one of my favorite fish recipes and I make it quite often.

I think it's the combination of the lemony, buttery topping - it's delicious - and the short baking time, ensuring that the fish remains juicy. (Another great recipe that makes white fish super palatable is this blackened halibut recipe.)

Lean white fish such as cod can dry out easily. Basting the fish with a tasty sauce and baking just until done ensures a tender, succulent, flavorful fish.

This recipe works well with any other firm, white-fleshed fish such as halibut, as long as they are fairly thick (about 1 inch thick). Just remember that white, mild, low-fat fish can easily become dry and overcooked, so take care not to overbake them.

Yes! You can totally use frozen fish in this recipe. Simply adjust the baking time. So if you have frozen cod fillets in your freezer, don't bother defrosting them prior to cooking. You can absolutely bake them frozen.

It's actually easier not to overcook them when you bake them from frozen. Simply add about 10 minutes to the cooking time.

If using frozen fillets, you might want to use olive oil instead of butter, as the butter tends to quickly harden on a frozen fillet.

Another way to check for doneness is to use a fork to gently flake the top of one of the fillets. When the fish is done, the flesh is opaque and you can easily separate it with a fork. As long as the fish is undercooked, its flesh will resist flaking.

This recipe makes some wonderful buttery sauce, so make sure you serve it with the sauce. You might want to serve the fish fillets on top of something that would absorb the sauce, such as cauliflower rice.

As you can see in the photos, I often serve this dish with a side of roasted asparagus. I simply cook both dishes in the same oven.

You can keep the leftovers in the fridge, in a sealed container, for up to 3 days. Reheat them very gently - you don't want them to dry out. It's best to reheat them in the microwave, covered, on 50% power.

Place the cod fillets in a baking dish and season with salt and pepper. Drizzle olive oil on top, along with the lemon juice and add the garlic. Sprinkle over some of the parsley. Low Calorie Baked Cod

Bake in the oven until the cod fillets are opaque and start to become flakey. You will notice some fat surfacing to the surface or falling into the sauce; and that’s completely normal and expected.

Be careful not to over-bake the cod so it’s not dry and rubbery. Remove it from the oven as soon as it starts to look flakey. You can serve it immediately garnished with the remaining parsley and any sides of your choice.

The government recommendation is that you should eat fish twice a week. It’s full of omega-3 which can benefit your heart and brain health. Fish cooks really quickly so it’s a great option for a healthy weeknight meal.

Perfect Oven Baked Cod

Once this cod is baked, if you have any leftovers store them in an airtight container and they will keep in the fridge for four days. To reheat it, place it in a pan in the oven at 275°F for 15 minutes until it is warmed through. Cover it with foil to reheat it so that it doesn’t dry out.

You can use either. I’ve heard that it’s fresher to use frozen fish than fresh fish because of how instantly fresh fish is frozen. So I prefer frozen for myself. If you use frozen fish, defrost it thoroughly before you bake it and be sure to remove any excess moisture.

This dish comes together so quickly and easily, it’s perfect for when you have had a busy day and just want something easy to throw in the oven. I will often throw in some roasted veggies alongside in the oven for a full meal. So fresh and delicious, this is a great recipe to add to your weekly meal rotation.
