Recipe Lemon Shrimp Quinoa
One of our favorite healthy household staples for weeknight dinners is shrimp. I love that it’s so versatile and can take on so many different flavors, as well as work in so many different recipes! Whether we’re having Sriracha Lime Shrimp Tacos, Shrimp Spanish Paella, or Healthy Cajun Shrimp Gumbo, shrimp is a great option for a quick and healthy meals.
Today, I’m sharing one of the best healthy weeknight dinner recipes (and/or easy lunch recipe) that has truly become a staple for us: Easy Lemon Garlic Shrimp served over soft, fluffy quinoa! Serve it with broccoli, asparagus, squash, or any side dish of your choice for a yummy, simple meal that the family will love!
This recipe only requires a few ingredients! Cooked shrimp sautéed in avocado oil (or any cooking oil) along with paprika, minced garlic, salt, pepper, and fresh lemon juice make up the base of this Easy Lemon Garlic Shrimp recipe. Serve the shrimp over cooked quinoa with fresh parsley and veggies of choice (optional) to make it a yummy meal!

This healthy garlic shrimp recipe checks all the boxes and is here to help keep the stress down and good habits up.
Like another one of my favorite garlic shrimp dishes, Garlic Shrimp Pasta, this healthy shrimp recipe is a true master in the art of less is more.
A touch of chili powder and cayenne give the recipe zest, lemon juice keeps it fresh, and as the name suggests, a generous handful of fresh garlic brings the recipe to life.
Easy Lemon Garlic Shrimp
This garlic shrimp with quinoa was inspired by the classic flavors of shrimp scampi (which have also inspired other healthy shrimp and vegetable recipes like this Healthy Shrimp Scampi with Zucchini Noodles). I made a few important swaps to lighten the recipe and make it more satisfying.
The garlic, lemon, and parsley classic to scampi are here to stay, but I replaced the butter with olive oil and omitted the pasta in favor of quinoa to help make this a more low-calorie shrimp recipe`.
