Recipe With Sweet Potato And Coconut Milk

With only a handful of ingredients this sweet potato soup comes together in just 40 minutes! It’s also naturally vegan and gluten free!

There are many recipes that sweet potato is great for (it features a lot on the blog!) but when autumn starts all I want to do is turn it into cosy soups.

But not just any old soup, it has to be one packed with flavour. And that’s where the spices come in! Curry powder, garam masala, turmeric, ginger, cumin and chilli powder.

This mix of spices together with the creamy coconut milk and sweetness of the sweet potato is a dream combination. I’m pretty certain you’ll be going for seconds!

In a large pot/pan heat 1/2 tbsp of coconut oil on medium heat. Once melted add the finely chopped red onion and fry for a few minutes before adding crushed garlic.

Once the onion is soft and translucent add the spices. Give it a good stir and fry for about 20 seconds until fragrant.

Now it’s time to add the sweet potato, coconut milk and stock. This is left to simmer for bout 20 minutes until the sweet potato is soft through, use a knife to check.

I used three medium-large sweet potatoes, which was about 1kg/2.3lb. Peel them and then cut into 1.5 inch chunks. I cut the sweet potatoes into discs and then into cube sized pieces.

It doesn’t really matter what size you cut them into just bear in mind it will affect the cooking time. You also want to make sure you are picking the orange skinned variety not the white.

Whilst the soup is cooking it’s time to make the toasted coconut flakes. These add some texture to the soup and they taste so delicious!

In a dry frying pan on low-medium place the coconut flakes in a even layer and toast for a few minutes on each side until lightly golden! Keep an eye on them as you don’t want them to burn.

Once the sweet potato is soft through we can blend it. I use a hand held blender for this so I don’t have to transfer it to a blender. But if you don’t have one use the latter!

Vegan Sweet Potato Soup With Coconut Milk

Add the juice of one lime and add salt and pepper to taste. I find I don’t need to add much salt as the vegetable stock already has salt in.

Serve and top with the coconut flakes, chopped fresh coriander, drizzle of vegan cream and some extra chilli powder (if you like it hot!). It would also be delicious with some toasted sourdough (or gf bread) for more of a meal!

In this dish. Sweet potatoes bring the sweet and savory flavors. Along with the sweet potato, I added chunks of red potatoes, sliced carrot and lots of onion & garlic. The coconut milk, brown sugar, and tomatoes add to the sweetness and the minced serrano, paprika, cumin, and pepper help to balance it all out.

That it can be made in one big pot (although you’ll still need a cutting board, a blender and a handful of gadgets/utensils). The fewer the dishes the happier the cook!

I love serving this recipe and my Homemade Massaman Curry over white rice to soak up all the flavor and top it with peanuts to add in a crunch.

Step 1: In a large skillet set over medium-high heat, add the oil. When the oil is hot, add the curry powder, paprika and cumin, toast until fragrant, about 1 minute.

Step 2: Next, add the potatoes, carrot and onion, stir to coat with the spiced oil. Cover and allow the vegetables to cook until soft, about 5 minutes. Add the garlic, ginger and chile pepper and cook for 2 additional minutes.

Step 3: Pour in the light or full-fat coconut milk, chicken broth, tomatoes, brown sugar, salt and pepper. Scrape the bottom to remove any browned bits, then bring to a simmer and cook for 10 minutes or until the curry thickens a bit.

Step 4: When the potatoes are fork-tender, remove 2 cups of the mixture and pour into a blender. Blend until smooth, then return to the pot.

Absolutely! If you want to bulk up this dish, try adding some thin slices of cooked chicken, tofu, chickpeas or shrimp, at the very end- it’ll be even more delicious!

You can store this sweet potato curry recipe in an airtight container for up to 4 days in the refrigerator or 3 months in the freezer.

To reheat, thaw in the refrigerator overnight and heat up on the stovetop until heated through. Or you can also microwave until heated through.

Sweet Potato Soup With Coconut & Corn

Curries are usually a blend of spices that are often regionally specific. They come in powders and pastes and very in spiciness. Yellow the mildest, and green the spiciest. The yellow gets it's colour from turmeric, the green gets it's colour from cilantro and Thai basil and the red, from red chillies.

Once the onions and chili have infused add the sweet potato and then the vegetable stock. It all comes to the boil until the sweet potatoes are cooked.

Chef's Pro Tip: Because hot foods blend better, puree the soup in a blender before you add the room temperature coconut milk to ensure that you get a really smooth consistency. This also has the added benefit of ensuring that you get the exact consistency that you're after.

As you can see in the above photo, the soup when blended before the coconut milk is added, is a very thick consistency. More like a thick puree than a soup. Adding the coconut milk is what brings the sweetness from the sweet potato and the fragrant spice from the Thai chilli paste together.

I wanted to keep this soup really simple so that the Thai curry really shines through and so that it's really easy to make on a busy weeknight, or even for freezer filling. With that in mind I kept the ingredient list pretty short:

But here's the thing. This sweet potato coconut soup can be customized to be anything you need it to be. By adding just a few additional ingredients, this soup can become a filling and cozy main meal, or a veggie-packed get well soon soup. As you can guess, there will probably be many variations of this soup in our life together. These all sound amazing, don't they?! And when the base of this soup is so simple and freezes like a dream, then we'd be crazy to not have a batch of this sweet potato coconut soup in the freezer at all times!

The more I write about this soup the more I love it. It's got so much going for it. It's healthy and creamy, it's freezer friendly and super cheap to make, and it can be a solid staple in the soup department, or it can be a stand alone dinner with some ingredient additions!
