I cannot believe the holidays are over. It’s the most wonderful time of the year for me, for my little family, and for mine and the hub’s extended families. We went on a few fun trips, shuttled between houses, exchanged gifts, and made millions of amazing memories I will cherish forever.

Even though we had to put Christmas away for another year, I still have cooking and baking — two ways in which I feel like I can spread a little love and cheer and good wishes year-round.

So, when the cold sets in and the nights are longer and we’re kind of all stuck inside a lot, nothing warms us up more than a nice, warm, hardy (and quick!) meal. Chicken and rice are a magic combination that I love to reinvent time and time again. And these short days call for quick meals, which is why the combination of chicken, rice, and Instant Pot truly checks all the boxes for us!

One of the (many) good things about making this healthy chicken and rice dish is that you can start with frozen chicken. I know I’m not the only one that forgets to let the chicken thaw in time for dinner.

Because frozen chicken can be cooked safely in an Instant Pot, it’s not a big deal to put it in with the rest of your ingredients and set the cooker. Putting frozen chicken in a slow cooker can be dangerous (i.e. food poisoning) because it will sit at an incorrect temperature for far too long.

If you are using frozen, boneless, skinless chicken breasts, then you will need to add some time to the cooking process, depending on how big the breasts are. For small chicken breasts, you’ll need to cook for about 11-12 minutes. For larger ones, you’ll increase the time to about 15 minutes.

You won’t be able to brown the frozen chicken breasts as instructed in step 1, but that’s okay. Your lemon chicken and rice dish will still be delicious, you’ll just miss out on some crispy brown chicken outsides.

Hands up if you love eating rice and even better if paired with chicken or salmon. This one pot chicken and rice recipe is what you need for a busy weeknight. Are your hands still raised? Ok then, let’s make this quick and easy Chicken and rice cooked in a pressure cooker.

Before I start cooking anything, I like having all my ingredients ready at arm’s length. That way, I don’t miss out on vital ingredients or running like a headless chicken (sorry chicken).

Instant Pot Chicken And Homemade Yellow Rice (pressure Cooker Recipe)

Long story short, prep all your ingredients. Don’t worry if you don’t own a pressure cooker, you can make chicken and rice one-pot meal on the stovetop. Stay with me and I will discuss it in a bit.

Turn pressure cooker to browning setting or saute if using an Instant Pot. Add oil then once it is hot or when it starts shimmering, add the seasoned chicken thighs and sear on both sides for three minutes each or until golden and crispy.

Add chopped onions and garlic to the pressure pot and stir fry for a minute or two until soft and translucent and flavour from the onion and garlic is released.

Instant Pot Chicken Thighs (fresh Or Frozen)

Add the chicken broth to the pot, bay leaves and stir to combine, then return the chicken thighs to the pot. Place them over the rice.

Put the pressure cooker lid on securely to lock, turn the valve to close or sealed position if using instant pot. Select the meat function or high pressure if using instant pot and cook for 5 minutes.

Once it is done (timer counts down) allow the pressure to naturally release or a quick release if you can’t wait (but be careful when doing a quick release) Take off the lid of the pressure cooker

Remove the chicken to a separate plate and fluff the rice with a fork before mixing to combine. If you want, you may shred the chicken thighs to serve with the rice or serve with the rice as it is.

Absolutely, follow the same process as I did for the pressure cooker and simmer on medium heat for 30 minutes. Check-in between this time, add more liquid if need be.
