Almond Cookie Recipe Dairy Free

These super light and moist, Dairy-Free and Gluten-Free 3 Ingredients Almond Cookies are so quick and easy to make, you will want to have one with your coffee every single day!

Almond Meal is one of my favourite ingredient to bake with, whether it is to make a Gluten-Free recipe, for Passover or simply because it tastes delicious. It makes any baked good super light and moist, just like my Pear Almond Cake or my Almond Orange Cake.

Vegan

This recipe was inspired by one of my Aunt's Passover Recipe, but trust me - you will want to eat it all year round. On top of being delicious, it must be one of the easiest recipe ever. It does not require any mixer or fancy utensil and will be ready to be enjoyed in less than 30 minutes.

Almond Rye Chocolate Chip Cookies

Just like my Almond Flour Peanut Butter Cookies, these biscuits are Gluten Free and Dairy-Free so they are a great alternative to my Almond Shortbread Cookies for anyone with dietary restrictions.

When I say they are quick and easy to make, I really mean... 3 ingredients only! For this recipe, you will need 3 ingredients only.

You can also choose to customise or add more ingredients if you want. You can for example add Vanilla Extract or Almond Extract to the dough for more flavours, or even some Lemon Zest.

Slice And Bake Almond Cookies With Cardamom, Orange, And Pistachios

I also love to drizzle them (or dip them) with some melted Dark Chocolate. As always, it is completely up to you and the recipe works great on its own!

These cookies are seriously SO easy and quick to make. Simply get a bowl and a whisk (or a spatula if preferred) and you are set to go.

Yes, I have tried this recipe with both forms of ground almond and they all work. You will get more texture with the Almond Meal and a softer crumb with Almond Flour.

Easy Gluten Free Almond Cookies (dairy Free)

They should be kept at room temperature in an air-tight container. To keep them moist for longer, place a sheet of paper towel under and over the cookies.

This is one of the easiest recipes we will share on the blog. The cookies are very simple to make; to the degree that I believe they are foolproof.

This recipe was given to me by a dear Italian friend. It has been in her family for many years. Some years ago, I made these biscuits for a shop I was working in at the time.

At that time, more and more people were discovering they couldn’t tolerate gluten, and the biscuits sold out on a daily basis.

I am so happy to be sharing this recipe with you today, so more people can continue to enjoy it. Even if you do not need to eat a gluten-free or dairy-free diet, I am sure you will appreciate these cookies just as much.

You can freeze the Almond Cookies both prior to baking and after. This is a great advantage around the festive season. You can freeze them for one month.

Almond Butter Mango Gluten Free Dairy Free Cookies

If freezing those which are baked, ensure that you freeze them on a baking tray, covered with cling wrap so they don’t dry out.

Similarly, if you have rolled them you can freeze them individually, on a baking tray and covered with cling wrap, before storing in an airtight, freezer container.

Almond Meal/Flour – The terms almond meal and almond flour are often used interchangeably. The meal/flour can be made from whole or blanched almonds. Almond meal/flour is not actually “flour” but finely ground almonds. When ground from whole almonds the texture will be slightly more coarse than when ground from blanched.

Caster/Superfine Sugar – this sugar dissolves more readily than granulated sugar. If you don’t have any it is easy to make your own. Use a high-speed blender or food processor and pulse a few times until the sugar grains are smaller in size.

Egg Whites – Egg Whites are a fantastic ingredient to have on hand – if you have leftover whites, you can store them in the freezer in an airtight container. See below for some ways to use up the egg yolk! If you are looking for an egg free option, try my Vegan Almond Cookies.

Delicious Dairy And Gluten Free Almond Cookies

It can be a minefield when beginning to eat gluten-free. There are so many labels to check as gluten is an ingredient in many foods.

The biscuits contain almond meal which is a great substitute for flour. Almond flour is high in healthy fats, protein and fibre, and adds a sweet, nutty flavour to baking.

When you bite through the crunchy exterior of these biscuits you will discover a rich, chewy interior. The dense texture that the almond meal provides is deeply satisfying.

Gluten Free Almond Flour Shortbread Cookies

Yes! You can freeze the Almond Cookies both prior to baking, and after! I have tried both methods and they are delicious either way.

Add blanched or whole almonds to a blender or food processor and pulse in short bursts until you have the texture of sand. Stir occasionally. If you take it too far you will have almond butter.

I try to find a patch of it in my garden whenever I can. It’s my favourite way to meditate, it’s doubly relaxing with the feeling of sun on my face. It’s been something I’ve had to call upon a lot lately as my anxiety has been on the up again in the past week. It’s been tough, I won’t lie, but I keep on telling myself that getting better is a process and it isn’t always as linear as we would like.

Our household has been in the wars lately as Duncan has been suffering from a very rare from of tinnitus in the past few weeks. He has seen an ENT specialist and is due to have an MRI in a few weeks, but because of the pandemic the wait is longer than usual. He is a very open-minded and proactive human – something I really cherish in him – and so he has been trying to help himself by doing facial message, acupuncture and meditation (which he surprised himself by enjoying a lot), but unfortunately nothing seems to have any effect on his ear fluttering at all. Meditation allows him to deal with the frustration better but does little to lessen the symptoms.

The doctor has no idea of what caused it and whether it will go away on its own or whether it requires surgical intervention. We hope for the former but it’s been weeks now and so Duncan is losing hope and leaning towards the latter. At the moment him and Tina are enjoying relaxing time in the sun with each other and I am hoping that she will summon all her cat healing powers…

Healthy Almond Cookies Recipe

In the sprit of autumn, today’s recipe is a tray of cosy vegan almond cookies. They are deliciously crunchy on the outside, slightly chewy on the inside, with a subtle hint of orange and an optional coating of chocolate and are easy to make. They are based on my old recipes for flourless hazelnut and pistachio cookies, which you are welcome to try instead if they appeal to you more. This time I’ve set you up to make these with flax and maple syrup instead of aquafaba and sugar and I’m very pleased with the result. Duncan, who ate them all but one, loved them and I hope you will enjoy them too!
