Indian Vegetarian Recipes With Sweet Potatoes
Sweet Potato Paratha is a delicious and healthy Indian flatbread recipe prepared with mashed sweet potato, wheat flour, and spiced with Indian spices. It is very easy to prepare and a very healthy breakfast or dinner for the kids or toddlers. Serve sweet potato chapati with curd, pickle, raita.
Indian breakfast staples include paratha. It creates the ideal Indian breakfast combo when combined with a bowl of curd and some pickles. In Punjab and North India, many people begin their day with some of the different varieties of paratha. Take aloo paratha, mooli paratha, gobhi paratha, paneer paratha, and so forth.
Today I am sharing a easy-to-follow recipe for shakarkandi (sweet potato) paratha that is sweet, spicy, and tasty, where I directly mix the boiled & mashed sweet potatoes into the wheat flour along with some herbs and spices.
Roasted Sweet Potatoes
I like to make it this way because it's easy and less messy. But you can also prepare like the traditional aloo parathas by stuffing the spiced sweet potato mixture into the dough.
Sweet potatoes are a great source of fiber, vitamins, and minerals. They’re also high in antioxidants that protect your body from free radical damage and chronic disease -Source Healthline.
Cut the sweet potato into half, and pressure cook for 3 whistles or until the sweet potato is cooked well with some salt. Peel the skin and grate or mash the sweet potato.
Savory Mashed Sweet Potatoes
In a bowl, add wheat flour, boiled & grated sweet potato, coriander leaves, ajwain, ginger, turmeric powder, red chili powder, garam masala, jeera powder, amchur powder, oil, and salt. Mix well.
Add very little water and make a smooth (but not sticky) dough. Smear little oil on the dough and let it rest for at least 10-15 mins.
Once you see bubbles, flip onto the other side and drizzle some ghee or oil on top. Flip again and drizzle oil or ghee on the other side until they have nice golden spots on both sides.

Oven Roasted Sweet Potatoes, Shakarkand Snack Recipe
Did you hear that? That was me squealing over this sweet potato and chickpea curry recipe from the one and only Angela Liddon from Oh She Glows. You are all some lucky readers because this is the 3rd cookbook giveaway I’ve held in about the past month. I think pretty much anybody with a pulse knows Angela’s blog. If not, today is your lucky day and the chance to win her 2nd newest cookbook, Oh She Glows Every Day!
Oh She Glows was one of the very first websites I discovered when I first went vegan almost 4 years ago. I didn’t follow any blogs back then, didn’t make any recipes, I just did my own thing in my kitchen. But somehow I found her and each recipe I’ve made has been so delicious. Her 1st cookbook was also one of the few vegan cookbooks I’ve ever purchased myself. I was super excited to get her 2nd one. When I received her email asking me if I’d review it, I naturally said (screamed) yes!
Her latest cookbook features over 100 easy and quick vegan recipes. I cannot wait to make my way through the book. The layout is bright and beautiful and clean. Simple and clean design to go along with the recipes. I especially loved all the personal family photos she shares in her book. It gives such a beautiful, personal connection to the reader. It is jam-packed with 9 chapters, including Smoothies, Breakfast, Snacks, Salads, Sides & Soups, Entrees, Cookies and Bars, Desserts, Homemade Staples and The Oh She Glows Pantry. I love, love that she has 2 dessert sections. It’s a known fact that I love to create desserts more than anything else and I know I would need a large section dedicated to just desserts as well. I was dribbling with drool looking at all of the desserts.
Chickpea And Sweet Potato Curry Recipe
For this post, due to my curry addiction, I naturally chose this curry recipe from the book. No surprise there, haha! This Sweet Potato, Chickpea and Spinach Coconut Curry was so delicious and comforting, just as a curry should be. I loved the addition of the spinach. I did add a little bit of coconut sugar towards the end to really hit those spicy notes. I like a little sweetness to spices. It was really delicious and I know I will make it often. It was also really easy to make. She has listed that it serves 6, but I could have eaten the whole thing in 2 servings….not that I did that or anything…hahaha!
Finish off the curry with a big squeeze of fresh lime juice. This really brings out all of the flavors, as it balances out the heat and makes it more complex and delicious. Don’t skip it!
Please note: this recipe is not mine, it is Angela’s from the Oh She Glows Cookbook, so I don’t want anybody confused as to why there is a tiny amount of oil listed. This was brought up in the last cookbook giveaway I did. Please understand, I do not use oil in my own recipes and as noted below, I just cooked in broth instead of the oil and it worked perfectly, so there you go! Easy peasy.

Because the recipe moves quickly once you've started, be sure to have the ingredients prepped and ready to toss into the pot as soon as they're called for. Keep them separate after prepping, as they are added as different stages. I also recommend chopping the sweet potatoes very small (1/4 -to 1/2 inch pieces); they will cook much faster this way. Sweet potatoes are my very favorite dirt candy! In this South Indian Sweet Potato Curry, bold spices are simmered with carrots, cauliflower, spinach, and (of course!) sweet potatoes.
Dishes – I can keep using the same knife and cutting board all day and not have to worry about cross contamination!
Creamy Thai Sweet Potato Curry Recipe
Menu stress – It is SO much easier for me to order off a menu now that I have less options. I thought I’d hate that, but it’s actually really, really nice.
Variety – Yep, I’m actually eating a wider variety of foods now that I cut out meat! I’m having lots of fun with vegetables I used to never eat (like beets! radishes! squash!), nuts and seeds, and creative sauces. Oh, and SO much avocado. On everything.
Energy – I don’t get tired after meals anymore. Crazy, right? I’m also sleeping better at night, which means I require less coffee during the day just to get things done.

Pride – Personally, I think it feels great knowing that I’m putting so many more plants into my body. It makes me feel like I’m taking care of myself 🙂
This has been quite the adventure so far, and I think my favorite part has been using my imagination to come up with fun meals that don’t include meat.
I’ve been making this South Indian-style Sweet Potato Curry on repeat for the past few weeks, and I ADORE it. I just serve it with some basmati rice and a little bit of naan.
Sweet Potato Halwa Recipe
This hearty and nutritious meal comes together really quickly. I know that the ingredient list looks long, but just trust me when I tell you that it is WORTH it!
I buy my wild lime leaves at a local international supermarket, but I’ve seen them at Whole Foods, too. If you can’t find any, just omit it from this recipe. BUT if you happen to come across some, go ahead and buy a bunch because they freeze well and add a very special flavor. I also use them in Thai curry recipes and even in some of my cocktail recipes.
