Easy Recipes Cookies Christmas

Take a break from the Christmas madness to make Christmas Cookies! These sugar cookies are classic vanilla biscuitsthat are made for cutting out shapesbecause they hold their shape perfectly when baked.

NO CHILL time, make them soft OR crispy. Ice them my EASY way, dip in chocolate, dust with icing sugar or serve them plain!

What I call “Christmas Cookies” are simply vanilla biscuits cut out in Christmas shapes and iced with colourful festive frosting. They taste like shortbread cookies, but not quite as buttery or crumbly. They are as classic as vanilla biscuits can be.

This particular biscuit recipe is made for cutting out shapes –in this case, Christmas shapes.Most cookies spread snd puff up so they bear little resemblance to the shape you expected!

The nice thing about these Christmas Cookies is that they’re made with pantry staples – so there’s no need to add to your ever growing Christmas grocery shopping list!!!

Unlike most cookie doughs suitable for cutting out shape, there’sno chill time required for this recipe. Ain’t nobody got time for chilling during Christmas madness – right??!

Bonus: the dough is easy to handle and can be scrunched up and rolled up again over and over until you’ve used up every scrap.

Ridiculously Easy Christmas Cookie Recipes

1. Number of cookies will depend on cut out size and how thick you roll your dough. It fills 3 baking trays.

2.Swapping trays halfway – this means that you put both trays in the oven with one in the middle of the oven and the other underneath. Halfway through the bake time, switch them around so the one underneath moves to the top shelf, and the tray on top moves to the shelf underneath. This ensures they both bake evenly because the top shelf bakes faster than the shelf underneath.

4. Storage –Keeps in an airtight container for a week. After this, they are still edible and totally delicious but they do start to dry out a touch (I think….I may be a bit too picky when I’m estimating shelf life of food for recipes I share!!). I would never describe them as stale, but they are better in Week 1.

Want to mail cookies to friends or family? It is best to choose a sturdy cookie, preferably nothing too delicate. Wrap the cookies really well so they stay fresh. I like to double wrap the cookies by placing them in zip top bags and then placing them in a reusable plastic storage container. If possible, mail the cookies using an expedited method so they get there when they are still fresh.

Easy Christmas Wreath Sugar Cookies

The recipe below is based off of our popular M&M Cookies. This version uses red and green sprinkles and M&M’s to make them extra festive. Here’s how to make them:

TO PROPERLY MEASURE FLOUR: Fluff the flour with your measuring cup, scoop a heaping portion, and level it off with the back of a knife.

CHILLING DOUGH: If you like thicker cookies, or you accidentally over-softened your butter (it's no longer cool to the touch), you can chill the dough for one hour before baking. 

Easy Sugar Cookie Recipe {only 3 Ingredients!}

Option 1: Immediately after the cookies come out of the oven place a round glass, bowl, or cookie cutter (larger than the cookie) upside down over the top of the cookie. Gently but quickly swirl the glass/bowl/cookie cutter in a circular motion. The edges of the cookie will bump against the inside of the glass creating a perfectly round shape. Note: This only works when the cookies are hot, straight from the oven, and still on the warm baking sheet.

Option 2: Immediately after the cookies come out the oven use the back of a spoon to gently push the edges inward to create clean edges and a perfect round shape.

As classic cookies go, there's not much better than buttery, tender, not-too-sweet shortbread. With just a very few common ingredients and the fortitude to quit mixing while you're ahead, it's easy to make these simple cookies great.

When it comes to holiday baking, I'm all about the ratios — and I don't mean ingredient ratios. I mean I'm looking for a very high ratio of cookie fabulousness to time, effort and skill level required. Once upon a time, this used to mean I would shy away from cookie recipes that require rolling pins and icing technique.

Making exquisite decorations is very hard, and I definitely don't have the skills or the patience for it. But making pleasing decorations is 100% achievable and really fun, especially when you do it with family and friends.

How To Make Easy Christmas Cookies

I'm pretty impatient and miz at this sort of thing, but I made those cookies up there for the very first time for our school's teacher cookie swap back in 2015, and I survived to photograph them. I even made them again the following week.

I know they don't look positively professional, but I like that they're pretty and yet obviously homemade. It's all about the attitude.

The line and flood method is exactly what it sounds like. Using one batch of royal icing, part of which you'll thin slightly more than the rest, you'll draw a line around the outside of each cookie and then flood the thinner icing inside the line to create a smooth surface.

In the cookies above, the ornaments (shut up, you knew they were ornaments) used line and flood. The snowflakes simply used the thicker royal icing. You'll find more detail in the post about Biscuiteers Royal Icing.

But first, I insist you watchthis cookie video from Biscuiteers' Instagram feed. It's the Britishest thing ever, and it's very sweet. Not just because it's made of cookies.

You don't! If you'd rather, you can roll the dough into a log of about 2 ½-inch diameter, wrap it well, and refrigerate to firm up (or even freeze it for later) Slice ¼-inch thick cookies from the log and bake as directed.

Soft And Chewy Christmas Frosted Sugar Cookies

You can bake and decorate the cookies a day or two in advance and store in an airtight container at room temperature. Once dried, royal icing is very stable.

You can freeze the shortbread biscuits after baking and before decorating. Arrange cooled cookies on a parchment-lined baking sheet and place in the freezer until solid so they won’t stick together. Then transfer them to an airtight container with parchment between the layers of cookies. Freeze for up to 3 months. Defrost at room temperature before decorating.
