I decided to make up a batch of the best eggless oatmeal cookies EVER, take a picture, type it up and it was the best decision I made this weekend. They didn’t last long and my kids and neighbors ate them up fast.
Somehow having oatmeal in them makes them seem healthier, so I’ve been making them more and more! I doubt these are any healthier, but it’s a nice change from chocolate chip cookies.
I eat oatmeal every morning and I’ve been storing it in this cute glass containerandcan leave it out on my counter and it looks nice.

I feel like oatmeal cookies have been around forever, but after a little research realized that’s not the case. They’ve only been around about 125 years. People didn’t feel oats were people food and feed it to their animals.
I made them again AND again AND again and ended up making about 4 batches until we decided we had the perfect one.
I like them with chocolate chips. He likes them with raisins. I like cinnamon. He doesn’t. He likes them chewy, while I like them crunchy. Well, it’s my blog so I made the executive decision what the final recipe was- oatmeal raisin cookies!

Out of all the recipes I make, I like making cookies the best. I love that you can grab one and eat it as a snack and you don’t have to grab a plate, bowl, fork or spoon. I can add them to lunch boxes and they are easily packed for car trips and sporting events.
I suggest using rolled oats. I’ve had several people message me about using other types, but the Old Fashion oats work best.

These cookies are so easy to make. I used almond extract as it pairs well with the oatmeal. I like another reader’s comment about changing spices, e.g cardamon. I will be adding this recipe into the family recipe book.

I wanted mine a little chewy and not quite as flat so I tweaked a little. I used margarine instead of butter. Used 1/2 tsp cream of tartar and 1/4 tsp. baking soda. Used milk instead of water and left out the extra oil. Also added a pinch of salt and about 1/8 tsp cardamom cuz I just love it. Sprayed my cooking sheets with Pam. Took about 12 min and they came out perfect!
I don't normally comment. Regardless if a recipe is sublime. However, this recipe had me dancing in my kitchen. So I had to post and say how TERRIFIC this recipe is! First of all, I have to say I always follow a recipe I make/bake for the first time exactly. So! For those of you, like me, that are never sure to use what's in your pantry for an online recipe, I want to tell you exactly what I did. I have a gas range, and I kept the temp at 350 degrees. I used my dark Wilton cookie sheets with parchment paper. I used my small cookie scoop. I had Quaker instant oats in the pantry so I used them. I used dark brown sugar; not light. I accidentally used 2 tablespoons of vegetable oil and 1 teaspoon of cinnamon, contrary to the recipe. My mistake that worked out. 11 minutes was a perfect time to bake for me. Once out of the oven, I left them on the cookie sheets for 5 minutes before transferring them to the wire rack. These cookies are so crispy and buttery rich...just like I prefer them...and they look like something out of a vague shop. (I wish I could post a picture.) Highly recommend this recipe for its taste and ease. I plan to bake these again with additions.
