I have got very fond memories of my grandmother cooking these vegetables for us. I loved them so much I did not care about calories because you have to eat these veggies with so much sadza( pap). My granny used to call it gusha and she cooked it very well.

Growing And Enjoying Okra

One thing I realized about okra leaves is the way they are cooked is almost similar to pumpkin leaves except that there is no peeling of stringy flesh on leaves. Guxe leaves are very small and soft though they have got some small thorns on the leaves.

I would choose to eat guxe any day, that’s how much I love it. As someone who is so cautious about my health, these are the things I would want to eat more Guxe is rich in fiber and also contains vitamins A and C, calcium, protein, and iron.

Okra leaves are a little on the coarse side, so many prefer them cooked over raw, such as in this super simple sauteed okra greens recipe.

Don’t have okra greens? No problem! This okra greens recipe works equally well for any of your favorite cooking greens such as kale, chard, collards, and mustard greens.

This will get you started in experimenting with cooking the nutritious okra greens, which are actually commonly used in many African countries, such as Zimbabwe, as well as Asian countries like India and Malaysia.

Indian Okra Recipe

Sauteed okra and okra leaves… RICH in nutrients and flavor, and not slimy when prepared this way. You can do this with just okra, just okra leaves, or both together, as we did for breakfast.

Now as gardeners know, okra plants are not overly abundant in leaves. So when we do harvest okra leaves in season, we’re very careful to only plus a couple per plant. While the younger leaves are typically favored, we tend to wait until after the okra plants have played out their blossoming and fruiting for the season before harvesting a lot of okra leaves for okra leaf recipes.

You can cook okra leaves in most of the same ways you’d cook any of your favorite greens. Some of our favorite ways to cook okra greens is to chop them into soups, egg bakes, stir fry and sautees.

Dry

While you’re at it, you can also cook this okra leaf recipe with okra pods. Then, right before serving, top the dish off with a couple okra blossoms as edible flowers, for an exotic touch.

However, we might pluck one to decorate the dish (and to eat), but otherwise, we prefer to let the beautiful flowers live out their destiny to become okra pods.

If you only have the older and tougher okra leaves, and you don’t like it that chewy, here are some ways to soften the okra leaves.

Stir

This same simple okra greens recipe works equally well for any of your favorite greens. From here, you can also add additional seasonings if you prefer.

What Is Okra?

If you prefer your greens to be more tender and less chewy, then you’ll probably want to boil them first. Then you can always add them to the saute pan of goodies.

If you don't mind chewy greens and prefer to retain more of the nutrients, then you might want to try our sauteed okra greens recipes, and sautee them instead.

There are a lot of crops we’ve tried growing in the heat of summer over the years, from long beans to loofah (for real!), to bitter melon and cowpeas and various summer “spinaches, ” among others. None of those are particular favorites, so we don’t put much effort into them any more. Or with certain crops that we do like, such as cowpeas and sweet potatoes, the insects they’ve attracted in our hot summers (i.e. aphids and whiteflies) make them just not worth growing.

But one of the crops that remain a constant for us in the summer is okra – we just can’t skip planting it!  It’s one of the easiest summer crops to grow in our climate – just plant it, water at the seedling stage, and then pretty much ignore it (our summer rains take care of its ongoing watering needs). You do have to beware of nematodes as okra tends to attract them, so you want to take care to treat for these organisms properly and not spread them around the garden.
