These easy Raspberry Bars have a buttery oatmeal crumble topping and come together in around 30 minutes! Perfect any time of year for parties, potlucks, and more! 

Is it summer yet? Okay, well since we can’t force that one, at least we can constantly bake with the flavors of summer.

This raspberry bars recipe is perfect because it doesn’t even require fresh berries, so when they aren’t in season, no problem. It actually just uses raspberry jam (and you can use any other kind you’d like instead). I prefer to use freezer jam, because it has a fresher flavor, but if you can’t find it the stuff from the shelf will work fine too.

You wouldn’t believe how easy these raspberry crumble bars are to make! This one is staying in my recipe book for sure.

They taste amazing, and I had the prep work done in about 10 minutes. Does it get much easier? These only take seven ingredients, people (and if you really wanted. you could narrow that down to six, just omit the salt and use salted butter).

These fruit crumble bars are perfect to make for entertaining. If you have a whole menu to prepare, it’s always nice to have a simple, yet incredible dessert, that will impress guests without all the extra hassle and clean up.

This was one bowl, one whisk and one baking dish that was lined with foil — so basically that came out clean. Dishes are my arch nemesis, so that just makes one more reason I love this raspberry oatmeal bars recipe. I’m pretty sure you are going to love these too!

Yes, these bars can be made with any fruit jam you have on hand. Blueberry jam would be great here, as would blackberry preserves.

No, you have to use old-fashioned (rolled) oats in this recipe. Steel cut or instant oats would mess up the texture of these raspberry bars.

The perfect treat you can make year round since it uses jam rather than fresh berries. You get a delicious butter crumb base with a sweet raspberry center.With a soft oat-brown-sugar-butter cookie-like base, and a thick, sweet, and tart but not overwhelming layer of raspberries in the middle, tucked in by a light dusting of those subtle streusel-like crumbs on top.

I have strong opinions about fruit bars. I like them to be soft, not crunchy. I like them to be fruity, but not overloaded with fruit. I like them to taste kind of like cookies, but not a crunchy cookie and definitely not anything resembling the flavor of almond extract. I just… that’s not for me. I’ve eaten enough bars in church basements in my life to know what I like.

And yes, you will want to eat it. I know you’re not supposed to eat raw flour and all that, but really? Not even a few little crumble chunks? I mean, good luck with that.

On to the raspberry filling. This is also eat-with-a-spoon-able delicious. I like this real raspberry filling better than a jam filling layer because the jam ones just get so sweet sometimes, know what I mean?

The goal here is that you will pull the bars out of the oven and see the jam filling looking like a barely-bubbling hot lava. That’s your ticket. That’s when you know it’s going to hold and you’re about to slice into some REAL NICE BARS.

When they cool, you have the big decision to make about whether to cut them in reasonably sized bars or extra large bars. I always vote extra large.

Thawing and draining the raspberries is important for getting the bars to firm up. When thawing the raspberries in the colander, you can gently squeeze them with your hands or press lightly with a spoon to get more liquid out. They will probably still be a little wet and mushy, which is fine. You just don’t want to have tons of excess water seeping out.

If you’d rather not mess with thawing, you can also use fresh raspberries! However, this is usually more expensive because it requires A LOT of fresh raspberries. And I found my fresh raspberry version to be very, very juicy. Like, kind of hard to eat.

I highly recommend the chill time! It helps them set up into bars that hold their shape really well. Also because I am weirdly obsessed with cold dessert bars and I think they taste so good.

Also, nothing against raspberries, but I’m inclined to believe that you could kinda put anything in between two layers of that crumbly cookie-like crust and be very happy with yourself.

It’s funny, sometimes all I want to make are savory recipes, but then sometimes my sweet tooth kicks into high gear, and all I really want to do is bake. Right now all I want to do is bake. I’ve been thinking about why this is and I’ve come to the conclusion that my desire to bake is happening for a few reasons.

All out, and that’s not what I want to do (nothing serious though). When I’m stressed, baking is my go-to stress reliever (and a good hike in the morning). Like a lot of people out there, something about baking is so calming and relaxing to me, especially on a rainy day when the stormy clouds have me feeling more gloomy than usual.

Reason two, it’s summer, and high time for baking with berries, stone fruits, and even vegetables. I’m really just obsessed at this point with the summer produce. The summer and fall months are my favorite produce seasons of the entire year.

Reason three, my favorite foods to photograph are foods with color and foods that I can play around with creatively to make look beautiful. Typically this tends to be some kind of baked good, as they can be stacked, styled, and paired with flowers (another go-to mood booster) much easier than say, a plate of chicken. I always have fun with my sweet recipe photos, so on bad days, I just develop sweet recipes in hopes they’ll turn the day around. More times than not, it totally works!

I spent all day this past Sunday pushing away my anxious thoughts and baking up all kinds of new sweet recipes. One of my favorites recipes I’ve developed in the last couple of weeks however is these bars.

Raspberry Crumb Bars Recipe

Extra buttery, soft, sweet, gooey, filled with raspberries and hints of both vanilla and cinnamon. Honestly? These are the fruity bars you need to make this summer. Addictingly good, like melt in your mouth good.

The base of these bars are made with a few simple ingredients: oats, flour, brown sugar, butter, and a pinch of cinnamon. It’s very much like shortbread on the bottom, but much more like a cinnamon streusel on the top. The bottom crust gets pre-baked before adding the filling and then the remaining dough is sprinkled over the raspberries for an extra crumb.

For the filling, I used both fresh raspberries and raspberry jam. Why both? Well, the fresh raspberries provide a burst of flavor with every single bite, but the jam makes the bars extra ooey, gooey, and well – jammy. I LOVE the combo and it’s the secret to making these bars the BEST.

Raspberry Lemon Crumble Bars

Ok, well that and the addition of a sweet summer peach. Yes, there’s even a little peach action happening in these bars. I didn’t want it to be over powering to the raspberries, so I only used one, but I love the combo of raspberries and peaches and found them to be a delicious addition to these bars.

The raspberry filling gets spooned over the pre-baked crust and then topped with the remaining crumble. Bake, and then about thirty or so minutes later you’ll have a kitchen that smells wonderful, and bars that look even better.

These are great as a sweet breakfast, afternoon snack, or after dinner dessert. Eating them warm out of the pan isn’t technically what you’re supposed to do…but um, you should do it.

The bars need to cool before you can cut into them, but they are insanely delicious warm out of the oven eaten with a fork. I’ll let you make the call on what way to eat them, but you guys know me, I’m all about warm, right out of the pan.
