Cake Recipe For Birthday Cake

My daughter is turning eight years old this week, and she’s been begging me for two things: a puppy and her favorite vanilla birthday cake. The puppy is definitely not going to happen – we already have one crazy dog – but the cake’s easy. I’ve been making this simple vanilla cake every year on her birthday since she was two. The cake portion of recipe is adapted from one of my favorite baking books, Perfect Cakes by Nick Malgieri, and the frosting recipe was handed down from my great-grandmother.

Meanwhile, whisk together the egg whites and milk. Be sure the eggs are at room temperature, otherwise your batter may curdle. To warm them up quickly, place them in a bowl of hot water before cracking them. When the butter and sugar are creamed, beat in the vanilla and almond extract, then add one-quarter of the flour mixture and beat on low speed.

Vanilla

Bake the layers for 30-35 minutes, until they are well risen and firm. Cool the layers in the pans for five minutes, then unmold onto racks to finish cooling.

While the cake cools, make the frosting. Begin by combining the butter and cream cheese in the bowl of an electric mixer.

You can spread the frosting smooth, or swirl it casually with a butter knife. Since it’s an all white cake, I like to scatter some festive nonpareils or confetti sprinkles on the edges for color.

Isn’t funfetti what we all think of when we think childhood favorite birthday cake? Even to this day it’s still one of my favorites and always will be. But trust me, now making it from scratch you’ll love it so much more!

It’s fun and easy to make. Yes it  may require the extra step of whipping up the egg whites but the fluffy end result is so worth it!

Dog Birthday Cake Recipe

This homemade recipe far outdoes a box cake mix. The flavor is a thousand times better plus it’s naturally flavored with real vanilla and almond extract, and made with real butter.

Most cakes including this one can be kept at room temperature but the frosting will hold up better in the fridge if the room is too warm. Note that it will keep longer refrigerated.

Rainbow

This cake (and just about any cake) is best eaten within a day of preparing it but it should keep well for about 4 -5 days refrigerated. Bring to room temperature before enjoying.

Petal's Birthday Cake

This cake (and most other cakes) should freeze well. I recommend baking the cake layers and letting cool completely then wrap with parchment paper and plastic wrap and placing in an airtight container and freezing up to two months. Then let thaw overnight in the refrigerator and frost.

You can also freeze a frosted cake it’s just harder to do (takes up more space, frosting gets smashed and doesn’t thaw out as fluffy). I’d recommend freezing separate slices if you have leftover.
