Vegan Apple Pie Recipe With Coconut Oil

Vegan Apple Pie Recipe With Coconut Oil

This simple vegan Apple Pie is the perfect dessert with the best Apple pie flavor! The recipe is very easy and can be made gluten-free and sugar-free. A delicious treat for Christmas, Thanksgiving, and just everyday!

After posting so many delicious Apple Pie desserts on Instagram, it’s definitely time to share my favorite recipe for a classic American Apple Pie on my blog. This recipe is actually the basic recipe that I have also used for all other treats, such as mini apple pie muffins, apple pie hand pies, and hot apple pie pockets.

Vegan

If I had to decide which cake I like best, it would be most likely an apple cake or apple pie. Not only because this simple pie is so easy to make, but also because it’s so incredibly delicious. The cinnamon apple filling makes it perfect for fall, but also reminds of Christmas and Thanksgiving. Once your house starts smelling so heavenly, thanks to the baked cinnamon apples, you‘ll notice what I mean and get into a cozy and relaxed Christmas mood.

Apple Crumble Pie {paleo, Gluten Free}

Traditional Pie crust is usually made of flour, butter, a bit of sugar, water and a pinch of salt. To make this Pie crust dairy-free, I use vegan butter. I assure you, the result will be the same and as delicious as using regular butter. You will not notice the difference. I prefer making the pastry myself, but you can also use store-bought pastry dough to make this recipe.

First, cut the prepared pastry dough in half and roll out both halves. One half is for the bottom, and the other half is to cover the Pie. You can either put the second rolled out dough as a whole on top, or cut into strips using a pizza cutter or knife to make a lattice design, as I did.

To make the filling, peel and core the apples, then slice thinly. Combine sliced apples with sugar, cornstarch, cinnamon and lemon juice in a large bowl. Toss until the apples are well-coated and set aside. Transfer the rolled out pastry dough for the bottom to a greased 10, 5-inch (27-cm) pie dish or springform tin and gently press against the bottom and sides. Prick the bottom of the pie crust all over with a fork and then fill with the apples.

Spiced Vegan Apple Pie: A Fall Favourite Dessert For Thanksgiving & Christmas

As mentioned before, you can either cover the Apple pie filling with the whole pastry dough or cutting into strips to make a lattice design. After laying the pastry strips on top of the apple pie filling, trim the overhanging dough around the edges and carefully, crimp the top and bottom of the pastry a bit together. I love using any leftover pastry to make decorations for the pie because it’s so pretty. Just shape the remaining dough into a ball, roll out again and cut out designs of choice using a cookie cutter (I used a flower design). Place them on top of the crust and brush the top with a little plant-based milk/ cream or melted coconut oil. Then sprinkle with a bit of brown sugar and bake until golden brown. That’s it!

This recipe is super versatile. You can cut out circles, quarters or rectangles to make hand pies or hot pockets. You could also lay out the pastry into muffin tins to make mini apple pies. If you decide to do so, just cut the apples slightly smaller and always make sure to seal the sides of the pastry so the filling will not leak out. Also, have a look at your pastry during baking because smaller sized pies are done faster. Just feel free to be creative and try out different Apple Pie varieties! It can be made in advance or on the day of serving. And I've included a few shortcuts if you want to make this in less than 1 hour! Perfect for Thanksgiving dessert!

Vegan Pie Crust (made With Coconut Oil!)

For quicker vegan apple recipes, check out my apple crumble pie, apple bread or apple crumb cake. You may prefer my apple tart or mini apple pie tarts!

Vegan butter (block-style preferred) or solid coconut oil. It's always better to use block butter for pastry as it's easier to handle and makes the pastry flakier. If you want to use coconut oil, I'd recommend refined coconut oil if you don't like the taste of coconut. I've also included an option for using vegan margarine/spread too!

Easy

Apples. You can use sweet snacking apples (such as pink lady) or, tart apples (such as granny smith) for a less sweet filling, use granny smith apples. I used a combination for a more complex flavor.

Best Vegan Apple Pie Recipe

Corn starch/flour. When the pie is baking, the juices come out from the apples and mix with the cornstarch (and other ingredients) to create a delicious finger-licking sauce inside the pie.

I prefer making shortcrust pastry in a food processor as it is quicker and mixes the ingredients more thoroughly. Just make sure you don't pulse the mixture for too long!

Add all the ingredients to your food processor (or bowl) and pulse (or mix) until the mixture comes together. The dough will likely need some chilled water so add it gradually until the pastry forms flaky crumbs (like the picture on the right).

Vegan Cinnamon Apple Pie (9 Inch Tin)

Once the pastry comes together, place it in an airtight container or wrap it in plastic. Chilled dough is always easier to work with!

For this vegan apple pie, you can use peeled or unpeeled apples. Once you've thinly sliced all of the apples, toss them in a large bowl with the rest of the filling ingredients.

The

Cover the bowl and set aside the apple mixture for at least 30 minutes. This will allow all the flavors to develop and for the apple to soften and caramelize.

Easy Vegan Pie Crust Recipe

If you've refrigerated your pastry for only 30 minutes, you should be able to roll it out immediately. If your pastry has turned into a cold solid brick, let it soften at room temperature for another 30 minutes or so.

Transfer your rolled-out pastry to your greased pie tin. There are a few ways to do this which you can see in King Arthur's Youtube video. If any large holes form in the pie crust, simply patch them up with excess pastry (no one will see it after baking).

Next, use of pair of scissors to trim off the excess pie crust. Then use a fork to prick the bottom of your pie crust.

The Best Vegan Pie Crust Is Totally Attainable

If you're short on time, top the pie with a single layer of pastry and cut a few 'vents' in the middle to allow air to escape while it's baking. Or you can turn the pastry into a crumble to make an apple crumble pie or skip it altogether and make my vegan apple tart.

To see how I made a lattice design, check out the video in this blog post (at the top of the post or in the gray recipe card at the bottom).

Vegan

If you just don't want to make the pastry, use store-bought shortcrust pastry. A lot of store-bought pastries use vegetable shortening so are accidentally vegan.

Or if you don't want to prepare the apple filling, use canned pie apple! Having a pre-made filling will reduce the baking time to 30 minutes. Or bake the pie until the pastry is golden brown.

To make this pie for Thanksgiving or a special celebration, you can make the pastry and filling ahead of time! The pastry can be made 3 days beforehand and refrigerated (or 2 weeks beforehand then frozen).

The apples can be prepared a day beforehand and left to macerate in the fridge overnight. On the day of baking, allow your pastry to come to room temperature so you can roll it out and assemble your pie.

How To Make Coconut Oil Pie Crust

Yes, simply use spelt/wholemeal flour, no refined sugar (or erythritol) and solid coconut oil in the crust. You may need to add a little more water as whole grain flours are more absorbent than regular flour.

I'd also recommend using coconut sugar or maple syrup in the pastry and filling instead (to taste). Or you can make the pie completely sugar-free by using erythritol!

Deep

Hot from the oven or cold from the fridge haha. Serve it with scoops of ice cream, thick whipped cream, pouring cream or, my favorite, custard!
