You worry that you’ll have serious dessert FOMO if you make the wrong choice. Well, worry no more because now you can have all three combined into one delicious cookie cupcake concoction!

I’m what they call a “chocoholic.” Any way I can get chocolate, I’ll take it. Hot chocolate? Yum. Chocolate covered pretzels? Delish. I’ve even gone as far as trying chocolate-covered bacon (it might sound gross, but believe me… it’s amazing).

For me, no dessert is complete without some sort of chocolate so when I’m looking for new recipes to try, I always make sure it’s got chocolate (or that I can find some way to add it in!). Brownie Cookie Cupcake is no exception to my rule – it’s actually got chocolate in three different ways!

Chocolate Chip Cookie Brownie Bites

Every year on Valentine’s Day, my boys and I make a special dessert for my husband as part of our Valentine’s Day gift. It’s one small way we can show how much we appreciate him and all he does for our family (and he’s got just as much of a sweet tooth as I do…). This year, we’re making these brownie cupcakes. I love that they combine my favorite cookies (Oreo’s), my oldest son’s favorite dessert (chocolate chip cookies), and my husband’s favorite chocolate treat (brownies)!

My boys love to help out in the kitchen and this is one of those recipes that makes it super easy for them to be successful. From mixing, to pouring, to frosting, my sons can make Brownie Cookie Cupcakes from start to finish all on their own. I totally encourage you to invite your kids into the kitchen with you – it helps with their self-esteem, independence, and it’s just a fun activity to do together!

Recipe to have your kids help with, go with the store-bought mixes like the recipe calls for. But, if you’re feeling ambitious and like you want to perfect your baking skills, go ahead and whip up some chocolate chip cookie dough, homemade brownie mix, and your favorite vanilla buttercream. I love to garnish my cookie cupcakes with a whole Oreo, it makes the presentation that much more adorable (and it gives you a bit more chocolate to indulge in…). Oreo And Peanut Butter Brownie Cupcakes Recipe

The ingredients are separated into two groups – the cupcake batter and the frosting.  If you’ve made my baking recipes before, you’ll find all the ingredients very familiar!

Preheat your oven to 350° F and line a 12 well cupcake pan with parchment liners.  In a large bowl, whisk together the eggs, coconut sugar, maple syrup, coconut oil, almond milk and vanilla extract until very smooth.  Stir in the almond flour, cacao powder, baking soda and salt and whisk until a thick smooth batter forms.

Use a spoon to fill the cupcake liners 3/4 of the way full to make 12 cupcakes.  Bake in the preheated oven for 16-19 minutes or until a toothpick inserted near the center of one cupcake comes out clean or with a few crumbs.

While the cupcakes cool, make the cookie dough frosting.  With an electric hand mixer or stand mixer, beat together the butter or shortening with the maple sugar and maple syrup until smooth.  Add in the flour, salt and vanilla and continue to beat.  Beat in the milk only if the frosting is too thick.  Once smooth and creamy, stir in the mini chocolate chips.  Chill the frosting in the refrigerator for at least 20 minutes.  

The cupcakes store very well in the refrigerator.  The cake part remains moist and the frosting thickens into the texture of cookie dough. 

Store leftovers in the refrigerator for up to 5 days.  You can also freeze these cupcakes for up to 2 weeks.  If you freeze them, make sure to defrost in the refrigerator before serving.

Chocolate Chip Cookie Brownie Cups

Vegan butter will work very well since it’s the same consistency and texture as actual butter.  That said, it’s difficult to find vegan butter that’s also paleo friendly.

This is the base I use for my dairy free buttercream frosting, as well as in pie crusts.  I use the Grain Brain brand or Spectrum.

You can also use ghee for this frosting, at room temperature.  Even though ghee is technically dairy, it is mostly butterfat and is tolerated by many people who otherwise can’t eat dairy (including myself!)
