These super easy brownies are made with just 5 basic ingredients: butter, flour, cocoa powder, eggs and sugar. No chocolate needed. The result is utterly delicious – fudgy, squidgy, rich… and very moreish! Better still, the recipe is really easy to adapt to suit your personal tastes… and what you have available in your kitchen.

These delicious, fudgy, rich brownies are made with cocoa powder only – no chocolate – making them quick, easy and hassle free. But don’t worry, there’s no compromise on taste! I’ve spend years perfecting my recipe to make them just as good as regular brownies. (In fact, because they are made with 100% cocoa and no random additives, they taste EVEN better than normal brownies!)

The Best Fudgy Brownie Recipe

All you need to do is melt the butter in a small saucepan over a gentle heat. Meanwhile, combine the flour and cocoa in a large bowl. Then, whisk together the eggs, sugar and melted butter in another bowl. Next, pour the egg/sugar/butter mixture into the flour/cocoa mixture and gently stir together until just combined. Finally, tip the brownie batter into a prepared brownie pan, and bake for 20-25 minutes.

If you usually find brownies too sweet, you are going to love this recipe! Because these brownies are made with cocoa powder only, it means you can adjust the amount of cocoa powder to suit your tastes.

The type of sugar you use will also affect the flavour of the brownies. Dark soft brown sugar will give you a richer flavour. If you prefer your brownies less rich, I recommend you use light brown sugar. (You can even use caster sugar, if you don’t have any brown sugar – but if you do, the flavour will be even less rich, and slightly sweeter.)

Seriously, though they taste at their absolute best when freshly baked, these easy peasy brownies will keep for up to 5 days in an airtight container… though you’d have to have the willpower of a saint (and no children / sweet-toothed other halves!) for them to last that long!

However, if you want to reheat them, you definitely can! Simply place the brownies on a baking tray and place in a preheated oven set to 180C / 160C fan / gas mark 4 / 350F for 5-10 minutes, or until piping hot.

Absolutely! When they have cooled, pack them into an airtight and freezer-proof container, separating the layers with baking paper, then put them in the freezer where they will keep for up to 3 months.

Today’s recipe uses the same ingredients as the homemade brownie mix, only it is written for when you want those brownies now and don’t want to make up a batch of mix ahead of time.

This recipe uses pantry staples. If you keep your house stocked with everyday baking essentials, you’ll be prepared whenever a chocolate brownie emergency arises.

Easy Cocoa Powder Fudge Brownies

One quick note on the cocoa powder. I like to use dutch process because I think it has a richer, less sharp flavor that is more similar to what you get in a box mix. It’s also darker in color.

The picture below shows the color of the brownies if you use regular cocoa powder. Please note that this recipe calls for unsweetened cocoa powder for baking, not “powdered hot chocolate cocoa mix.”

Start by melting your butter in a large microwave-safe bowl. You can also use oil or substitute half of the butter for oil. I like the flavor that butter gives, but oil makes them a tad moister.

Next, whisk in the sugar, and make sure the mixture is cooled almost to room temperature. (You don’t want to scramble your eggs)

Add your room temperature eggs and vanilla. (Room temperature so they don’t solidify your butter back into a lump.) And beat well.

I recommend using a hand mixer on high for a minute or two here. Beating well at this stage forms that crackly signature brownie crust.

Easy Chocolate Walnut Brownies With Cocoa Powder

Add the cocoa, flour, and baking powder, and mix until combined. Pour into a greased or parchment-lined 9 x 13-inch pan and bake at 350 F for 28 minutes or so. Ta da. Warm, homemade, fudgy brownies.

You can also use this basic brownie recipe to make Brownie Bites. Simply spoon the brownie batter into grease mini muffin tins, filling them about ½ full. Bake for about 12 minutes or so until set.

Dark Cocoa Powder Brownies

When it comes to easy desserts, brownies are kind of the best. I love how quickly they come together, and they are usually what I make when I need a great dessert, but don’t have a lot of time or attention to focus on making that dessert. Every time I share these brownies with someone, they want the recipe.

These easy brownies made with cocoa powder have a perfect brownie texture, at least in my book. You get that awesome, chewy, sink your teeth into them experience with these, as well as that great shiny, ever so slightly crusty top.

While many homemade brownie recipes require you to melt chocolate, these do not. Don’t get me wrong, there are some phenomenal recipes out that begin with chopping up chocolate, I just never find myself making them. And when you taste these brownies made with cocoa powder, you’ll probably understand why I don’t feel the need to get out that bar of baking chocolate.

Cocoa Brownies Recipe

While I’m a big fan of dark cocoa powder, in this recipe I stick with regular cocoa powder. Like all brownies, these are sweet – but not overly sweet. They actually taste like dark chocolate in my opinion, so using dark cocoa powder might push them a bit too far to the bittersweet side.

Now if you love a super dark chocolate and want a bittersweet brownie, by all means, grab that dark cocoa powder and take these brownies made with cocoa powder to the deep, dark chocolate side.

Speaking of cocoa powder, I prefer to go with a natural cocoa powder on these, not Dutch process. Most grocery story cocoa powders such as Hershey’s, Ghirardelli, and Scharffen Berger are natural cocoa powders. Because it’s not an overly sweet brownie recipe, I like to add mini semi-sweet chocolate chips for those sweeter pops of chocolate in each bite.
