Easy Lemon Chicken Risotto Recipe
Today, we are talking all about rice. Rice is a standard pantry staple in this house. I always make sure that I have a bag handy for dinners. A lot of nights when I get home, I haven’t always thought about what we are having for dinner, but I know that if I have rice on hand, I can always come up with something! For me, rice is a lifesaver because it is the perfect vehicle for so many dishes, whether for a side dish or a main dish, and it works for so many different types of cuisines.

Risotto is such an elegant but comforting dish, and it always makes weeknights feel a little more special. And while it does take some time to prepare, it is worth every second when you take that first bite of creamy wonderfulness! Risotto seems even more perfect this time of year, and no matter what other ingredients you have on hand to add, the rice is always the star of the show. This Chicken and Lemon Parmesan Risotto is perfect for any night of the week. It seems so fancy, but all you need is some RiceSelect Arborio rice, broth, chicken, Parmesan cheese, and lemons and you’ve got yourself the perfect dinner!

Almost every single time I make risotto, it acts as a side dish. It’s often vegetarian for me except for the occasional time when I trip and drop a handful of super crunchy bacon into the pot.
So, tell me about Easter brunch! Do you do Easter brunch? Do you serve one? Host one? Attend one? I’m fairly late to the game, but to be real that honestly translates to the fact that I can never make up my mind and don’t like to plan too far in advance. Because what if I want something else?

This is a contender though! For so many reasons: tastes like spring, can be made in one pot, acts as a full meal, thus leaving me room to serve lots of empty extras like sticky buns and bacon wrapped figs and chocolate peanut butter filled eggs.
I didn’t solely make it for that purpose, since it also makes a fantastic mid-week meal. It sort of feels fancy, but it’s not. It’s not unhealthy, which works for Monday through Thursday (I know you feel me). It’s comfort food, but not super heavy comfort food. It’s the kind that helps carry you into warmer weather, when the mornings are 33 degrees and then you’re sweating in the sun come two o-clock.

Creamy risotto is so easy to make. It requires a handful of ingredients and a little patience and that’s it. Firstly, you need to use a short-grain rice variety for risotto. Arborio is the most common but Carnaroli works just as well. There are other varieties but these two are the most well-known and most often used. The mascarpone adds a luscious finish but is completely optional and can be replaced with cream or left out. Chicken breasts can be substituted with bone-in chicken thighs.

Yes you can. The alcohol does cook off while making risotto but if you prefer to not use wine, simply add more stock and a squeeze of lemon juice.
Yes, you can. Risotto needs to be super creamy but the rice grains need to be able to keep their shape and not be broken. This will result in a grainy, floury texture. If your risotto is overcooked, don’t despair. You can use it to make fried arancini which are the most delicious appetizer recipe.
Risotto rice contains rice gluten, which is not the same as gluten that causes intolerance. Rice gluten is what gives risotto its creaminess. If you are gluten intolerant, make sure the risotto rice you buy is gluten free as many factories process and package rice along with gluten-containing grains and wheat, causing cross-contamination.
