Chicken Breasts in Creamy Spinach Parmesan Sauce – Tender and delicious, our simple and easy chicken breast recipe uses skinless and boneless chicken breasts cooked in a creamy, buttery parmesan sauce with an irresistible garlicky flavor. Keto and low-carb friendly, the chicken recipe is ready in just 25 minutes!

Slowly add chicken broth, heavy cream, and Parmesan cheese and mix to combine until smooth while simmering for 2-3 minutes. Adjust seasoning with salt and pepper.

In fact as a kid, spinach was my number one veggie.  But of course there was a caveat – it had to be with cheese!  Like spinach pie (how I LOVE spinach pie!)

I’d been wanting to create a creamed spinach recipe but personally, I think it’s better to add some protein and call it a full meal!

I decided on my favorite, go-to boneless skinless chicken thighs because they have loads of flavor and are so juicy, they’re the perfect compliment to the creamy spinach sauce!

Like with my spinach artichoke pasta, I decided to use Kite Hill Cream Cheese here to get a thick and creamy sauce.

Kite hill cream cheese is almond milk based and paleo + Whole30 friendly.  I usually buy mine at Whole Foods but they also carry it at many grocery stores as well as Target now.

Cook the chicken about 7 minutes per side, or until the outside is nicely browned and inside is cooked through.  Remove the chicken to a plate and set aside and wipe the skillet of any burnt pieces.

One Skillet Creamed Spinach Chicken {whole30, Keto}

Lower the heat a bit and add the remaining oil, then cook onions and garlic until fragrant.  Add in the cream cheese, broth, lemon juice and mustard, plus the nutritional yeast, if you’re using it. Whisk well to combine as you cook for 60 seconds.

Return the cooked chicken back to the skillet and let simmer for one minute to heat through, then remove from heat and serve immediately.  

Since you have lots of sauce, the cauliflower rice won’t need much seasoning – just salt and pepper and a little garlic powder.

One Pan Keto Chicken And Spinach

I like to sauté it in ghee or olive oil, for just a minute or two so it doesn’t soften too much.

I'm so proud of this book and I wanted to share one of the recipes that I wrote for it – the creamy chicken spinach bake! When you need something comforting, filling, and satisfying – try this dish!

Spray a medium baking dish with cooking spray, and spread out some diced chicken chicken in the dish. Layer some fresh baby spinach over the top, keeping it as flat as possible. You could also replace the fresh spinach with a 10 oz box of thawed, thoroughly drained frozen spinach.

In a medium bowl, combine some cream cheese, shredded mozzarella, sour cream, and garlic. You can use a stronger cheese if you prefer – sharp cheddar would be good. Season with salt and pepper to taste. Spoon the mixture on top of the spinach.

Easy, Low Carb Keto Spinach Cream Cheese Stuffed Chicken

Cover with kitchen foil and bake in a preheated oven for 20 minutes. Remove from the oven, uncover, and top with more mozzarella. Return to the oven for another 10 to 15 minutes, or until the chicken has reached an internal temperature of 165°F (a meat thermometer is useful for this!).

Great flavor and so easy! But would definitely make it in an 8 x 8 casserole dish next time. Just a little too flat in a 9x11 dish. I ordered your book too!

@Laurie Bunting, I would think if you defrost the spinach then squeeze as much water out of it as you can by using cheese cloth or strong paper towels. I do this for my quiche recipe that calls for fresh spinach. It works wonderfully!
