Mix this homemade coleslaw recipe in halves to ensure even distribution of the dressing. Start by adding half of the coleslaw mixture in a large mixing bowl. Pour half of the dressing over the coleslaw in the bowl. Add the rest of the coleslaw mixture and pour the rest of the dressing over it. Stir until combined.

Finely chop 1 medium head of green cabbage (6 cups), half a head of purple cabbage (1 cup), and use 1 cup shredded carrots.

When you’re ready to serve, stir the coleslaw. Then garnish with salt, pepper, extra celery seeds, chopped onion, etc. and enjoy on the side of your favorite BBQ or potluck fare (like this chicken satay, pasta salad, etc.). 

I prefer to finely chop my vegetables if I don’t use a store-bought bag of coleslaw mix. You can also use a hand held shredder or food processor to shred the cabbage and carrots.

I'm going to come out and say it - I love coleslaw. Mostly because I love cabbage. Cabbage tends to get overlooked as a vegetable. Which is unfortunate because it's incredibly versatile and it has tons of flavor.

You can steam it, saute it, or stuff it. I've even seen cabbage baked into cookies (although I personally believe that cabbage has no place in desserts). It's cheap, hearty, and super good for you.

Best Healthy Coleslaw Ever (no Mayo!)

You can use pre-packaged cabbage as well but I definitely recommend using fresh if you can find it. Especially during the late summer when cabbage is in season.

This recipe calls for 6 heaping cups of chopped cabbage - 3 cups of red and 3 cups of green. This amounts to roughly ½ head of each of red and green cabbage.

Simply grate 1-2 large carrots using a box grater. You can use pre-grated carrots as well but grating carrots on that box grater gives you a nice little arm workout.

Light Coleslaw Dressing

Next up is the dressing for the slaw. The ingredients in this dressing that really highlight the flavor of the cabbage are the Dijon mustard and the celery seed.

It's such a great side dish - I love to bring a bowl of coleslaw to a summer BBQ, potluck, or picnic. It's perfect with any type of grilled meats such as ribs, pork, or brisket.

I love it paired with BBQ sauce (like in these BBQ Chicken Sloppy Joes) - The light and tangy flavors of the dressing help to cut the richness of the thick sauce.

The Best Coleslaw (not Drowning In Mayo!)

This coleslaw lasts 2-3 days in an airtight container in the fridge. I would not recommend freezing it as it contains mayo. It is best eaten fresh or within a few days.

Do not leave it out in the sun for more than an hour or so if serving at an outdoor BBQ or picnic, as it contains mayo.

Everyone has their own preferences for add-ins when it comes to coleslaw. For the recipe, I tried to make the simplest version so you can adjust how you like.

I personally need celery seeds in my coleslaw, so I put that as an optional ingredient. You can leave it out, but it gives it so much more flavor and a little more crunch.

If you like a little heat, add some hot sauce or horseradish. Just remember to add you extra ingredients in the WW Recipe Builder since they will most likely increase the points.

Since the coleslaw and meat combo are only 1 SP, including added BBQ sauce, I was able to splurge on a huge broiche bun. This whole sandwich is only 6 SP!

If you refrigerate the coleslaw for more than an hour, the cabbage will release some water, so it will be more like 1/3 cup. Either way, you can divide into 6 portions for 1 SP each.
