Satay Sauce Recipe Using Peanut Butter

When you want everyone to agree on what to eat, make Chicken Satay. Grilled chicken skewers flavored with soy, lime, and ginger and served with a peanut dipping sauce, they taste succulent, a little spicy, and a little sweet. Satay is easy to make, scrumptious to eat, and there’s something inexplicably fun about eating food on a stick!

Between the quick and easy prep, leftover potential, and did I mention PEANUT DIPPING SAUCE, you’ll fall in love with this easy satay recipe!

Although there are many varieties of satay, all of them begin with tasty meat that’s marinaded in a variety of herbs and aromatics (chicken, pork, and beef can all be used for satay), then grilled over an open flame for a lightly crisp exterior, smoky taste, and juicy interior.

Pork Satay With Peanut Butter Dipping Sauce Recipe

In Indonesian chicken satay recipes and Thai chicken skewers, the sauce is typically made with peanut butter, sugar (I use honey), and spices.

It ends with a rich and tangy-sweet peanut dipping sauce that you’ll want to start enjoying on EVERYTHING (we love it with Air Fryer Tofu too!).

Chicken can be marinaded up to 1 day in advance. I don’t recommend marinating the chicken for longer than 24 hours, as the meat will begin to break down.

Personally, I prefer the char the grill (or a grill pan on the stovetop) adds, but if you don’t have access, the oven will still produce good results.

If you have leftovers of these chicken skewers (which I doubt you will, but hey) they’re delicious over a bed of your favorite greens, with Homemade Fried Rice, or this Asian Noodle Salad.

Have different degrees of spiciness. If you or your family are sensitive to spicy foods, you can leave out or reduce the sriracha to suit your tastes.

Minute Authentic Thai Satay Sauce

I have not tried making this recipe with another protein, but I think beef or pork would both be tasty. If you decide to give it a go, I’d love to hear how it goes. I suggest using flank steak cut across the grain into 1/2-inch strips and diced pork tenderloin.

If you don’t own a grill, don’t despair. I’ve included directions for baking chicken satay above. You can also enjoy this chicken satay recipe by using an indoor grill plate on your stovetop or even a panini press. Just note that the cook times may need to be adjusted slightly so keep an eye on the chicken as it cooks.

Of course it also goes perfectly with satay chicken skewers- which is a recipe we all love at home. Not forgetting beef satay skewers too (I must get a recipe up for that one on the blog).

I prefer to use shop-bought smooth peanut butter for the sake of simplicity, but you can whizz up your own peanuts for this if you prefer. Or you could use chunky peanut butter.

In a small saucepan mix together peanut butter, soy sauce, chilli flakes, fish sauce, coconut milk, light brown sugar and ground coriander whilst heating over a medium heat.

Beef Satay With Thai Peanut Sauce

It will thicken as it approaches boiling point. Turn off the heat just before it comes to the boil and stir in fresh lime juice. You can serve it warm or cold. If serving it warm, reheat right before serving.

Yes! The sauce can be made ahead, cooled, covered and refrigerated for up to 2-3 days. Place in a pan and reheat whilst stirring if you want to serve it warm.

Either crunchy or smooth is fine. Alternatively you can whizz up your own dry-roasted peanuts in a food processor to a chunky or smooth texture.

You can leave the chilli flakes out entirely if you prefer. I like it a little spicy, but it's completely up to you.

Reheating: The sauce can be served cool or warm, or you can reheat if you wish (the oil will separate a little from the peanut butter and coconut milk as it cools, but a good mix with a wooden spoon will bring it back together again).

At the risk of sounding totally obnoxious – this is a recipe for Chicken Satay skewers with Thai Peanut Sauce that truly stacks up to your favourite Thai restaurant.

Thai Red Curry paste is a “secret ingredient” in both the marinade and the sauce. You just need about 2.5 tbsp which doesn’t sound like much, but we don’t want this to taste of red curry. We’re just using it as a flavour enhancer.

While I’m an advocate of homemade curry paste for Thai Red Curry and Green Curry, for recipes like this that use a smaller quantity, I use store bought.

Peanut Dipping Sauce Recipe

I use Maesri Thai Red Curry Paste which I think is the best by a long shot. I also use this same brand for Green Curry and Red Curry for quick midweek curries.

While commercial peanut butter spread is ok, if you want areally great authentic Thai Peanut Sauce that truly stacks up to your favourite Thai restaurant, usepure peanut butter.You’ll find it in the health food section of most supermarket nowadays.

Also, natural peanut butter is thinner than commercial peanut butter spreads (see below) which means you needless water to thin the sauce =better peanutflavour in Thai Peanut Sauce!

Ahead of publishing this recipe, I tried the Thai Peanut Sauce with natural pure peanut butter vs commercial peanut butter (Kraft, now Bega) side by side to confirmthis!

I’m a firm believer that Chicken Satay skewers should be tasty enough to eat on their own and the peanut sauce just takes it over the top. So I like to marinade the chicken to make it extra tasty.
