Recipe For Beer Queso

Recipe For Beer Queso

Pub style beer cheese dip is a popular party appetizer filled with cheesy goodness that’s kicked up a notch with a crisp and mellow beer flavoring. Great for football games or get-togethers!

Warm and creamy beer cheese dip pairs so well with pretzel bites or homemade German pretzels, it’s undeniable. This recipe uses a three-cheese blend that’s highly adaptable to suit your taste, so pick your favorite beer and cheese combo and give it a try for game day or your next get-together.

Beer

CHEESE – We’re using Colby Jack, Gruyere, and sharp cheddar. You can mix and match cheeses to your taste, but we do recommend you use blocks of cheese over pre-shredded cheeses as the pre-shredded contain flour and other binders that will not melt as well. You can shred, cube, or slice your blocks of cheese.

BEER – We love the taste of a mellow, crisp lager in our beer cheese dip but the possibilities are endless when it comes to what type of beer you can use. Pale ales and Guinness work nicely here as well. Grab your favorite as it’s one of the main flavor components!

Like a spicier cheese dip? Add in some cayenne pepper, jalapenos, or even some hot sauce to the mix. Some additional mix-ins include diced tomatoes, onion, ground beef, or green chiles.

Just like wine does with cheese fondue, beer balances the richness of gooey, melty cheese, thinning it just enough to make it perfect for dipping pretzels, chips, and carrots, just to name a few. It’s the perfect dip for the Super Bowl, your next game night, or just a plain old Tuesday that needs a comfort food boost.

The best beer for beer cheese dip depends on how much you like beer. This recipe uses a strong, hoppy IPA, which brings a big beer-y flavor to the party. If you’re a fan of milder beers, opt for a pilsner or a lager. Stout beers are delicious, but be aware that they might affect the color of the dip.

It's a little tricky. Most of the alcohol cooks off, leaving just the beer’s flavor behind. While some residual alcohol could remain, it’s a very minor amount. If you’re still concerned, you can use a non-alcoholic beer to get a similar flavor.

Low and slow cooking is the way to go to keep this beer cheese dip silky smooth. If you crank up the heat and try to melt the cheese too quickly, it could cause the mixture to separate. Keep the heat low, add the cheese in batches, and have your favorite whisk handy.

Pretzels—in any size, shape, and form—are the perfect partner for beer cheese dip, but that’s just the tip of the ice-beerg. Try surrounding this beer cheese with a variety of dippers, like steamed fingerling potatoes, roasted cauliflower, sliced cooked bratwurst, baby carrots, celery sticks, broccoli florets...basically anything. Here’s one last pro tip: If you're serving to guests, transfer the dip to a small slow cooker set to low heat to keep it warm.

This cheesy appetizer is as easy as 1, 2, 3 and will probably be enjoyed just as quickly! This starts with a roux (butter and flour mixed) to make a thick sauce.

Tip: Shred your own cheese from a block. Pre-shredded cheeses have additives that keeps it from sticking in the bag so it may not melt nicely.
