Mermaid Cake Recipe Easy
These days, my cakes are made for family birthdays. I made this sweet little mermaid cake for my grand daughter Natalie. Hard to believe she is turning 8 years old! I always ask what they want on the inside, as well as the theme for the outside of the cake. The request for this one was “red velvet with buttercream frosting”, and “Mermaid” as the theme. I took that 1 step further, and added a cheesecake layer on the bottom of the cake! Cake and Cheesecake? It’s a great flavor and texture combination.
I started with 2 homemade 8″ red velvet cake layers, made the day before. I used some extra batter to make 4 jumbo cupcakes (which I would use to form the mermaid tail). I covered these, and placed them in the refrigerator overnight.
You can make your own cheesecake – but why? This cake already took several hours to make, so I purchased a 10″ Eli’s assorted flavor cheesecake, pre-sliced. It’s delicious. I just cut it down to 8″ to match my cake layers, and it fit together perfectly! Everyone will get a surprise cheesecake flavor when we cut into it!
Mermaid Cake Without Fondant (easy Tutorial)
The mermaid “torso”, and edible decorations came from Hobby Lobby. I fashioned the mermaid’s “tail feathers” using parchment paper, shaped over my rolling pin – then painted on a heavy coating of melted teal colored candy melts to resemble a fluttery tail. Make sure it is strong enough, as it will be very fragile (and breakable) if it’s not thick enough. I let it dry, then put a few more coats on it to be sure. Then chill in the frig til you are ready to assemble the cake.
I placed this on my cardboard cake circle, and pressed it together tightly. Then I trimmed it to an 8″ circle. Yes, I saved the pieces I cut off for snacking later!
I mixed up 2 batches of my cream cheese buttercream frosting, and start to assemble the cake. I leveled the 2 cake layers.No mermaid party is complete without a Mermaid Layer Cake. This moist vanilla cake with vanilla almond buttercream is sure to be the highlight of any Summer dessert table. Colorful frosting, sprinkles and candy melt mermaid tails give the perfect mermaid vibe!
Amazing Mermaid Birthday Cake Ideas
Summer is all about fun and what better way to celebrate than with a mermaid-themed party! I love anything and everything mermaids, so a Mermaid Layer Cake was definitely on my list to bake for this year’s Summer Dessert Week hosted by Angie from Big Bear’s Wife. I didn’t want to go too crazy with the flavor on this one, since Little L&C was more interested in the color choices than flavor.
A simple and moist vanilla cake is the base for my Mermaid Layer Cake. The recipe I used calls for 8-inch cake pans, but I opted to bake mine in 6-inch. The only difference is the baking time. Since there is more batter in a smaller area, it took about 10 extra minutes to bake in the 6-inch cake pans. I used three, but next time, I might divide it into 4 6-inch pans. I prefer the look of a taller, slimmer cake, as opposed to a shorter, wider one.
This cake is very vanilla. I love when you can really taste the vanilla in cakes, and used Adams Best Vanilla. There is a whole tablespoon in the recipe, so it has a lot of flavor in the cake. I also used Dixie Crystals sugar in both the cake and frosting.
Little Mermaid Cake
I used a traditional American-style buttercream for the frosting. To make sure I had enough, I made one and a half batches of frosting. There was quite a bit leftover, which is perfect for some mermaid-themed cupcakes too! You can totally get away with only making a single batch, but I usually err on the side of caution when it comes to these kind of cakes. I like to have extra in case I decide to switch up the piping while decorating.
If you couldn’t tell already, teal is one of my favorite colors, so I loved using the turquoise gel color to make the base frosting on the mermaid layer cake. It’s the same color turquoise in my Pineapple Paradise Cake too! For this cake, I used turquoise, dark turquoise, mint, mint + turquoise, and regal purple.
Sprinkles are a must with a fun cake like this, and Sweets & Treats feeds my sprinkle addiction with her cute and custom sprinkle mixes. I often create cakes and cupcakes based off of the colors in her mixes, like my Purple Velvet Halloween Layer Cake. I used the Sea Splash sprinkle mix for my Mermaid Cake.
Easy Mermaid Inspired
Wilton gave us some fun baking supplies, including a mermaid cupcake kit. I used the blue candy melts and chocolate mold to create adorable mermaid tails.
RECIPE NOTE: I LOVE USING PURE ALMOND EXTRACT IN BUTTERCREAM FROSTING, BUT IT CAN BE OMITTED IN CASE OF A NUT ALLERGY.
* Crumb coat is a thin layer of frosting applied after stacking the cake, so the crumbs do not show when the final layer of frosting is applied.

Every year I make myself a birthday cake (cue last year’s peanut butter and jelly cake and 2017’s chocolate cake) and despite some big projects that I have been working on, I still managed to make an over-the-top cake for this year’s celebration. I ordered these mermaid tail and sea shell chocolate molds quite a while ago, with the intention of making the cake last summer. I then got caught up with making all the other seasonal cakes and cookies and this summery ocean-themed cake got pushed aside. I am glad I ‘forgot’ about this cake and inadvertently saved it for my birthday. This cake is everything I love — mermaids, pastels, gold accents, overly ornamental cake decorations.
Mermaid 3 Layer Cake In 1 Hour
Despite being only a couple months in to 2019, I think 2019 has already been and will continue to be one of the most exciting years for this blog. In the last three months, I accomplished many things that were a first for me: recording simple videos for Instagram to give you different types of content (shaker cookies! buttercream piping!), making conchasdespite my fear of working with yeast, and working on my first product collaboration with my favourite chocolate and pastry shop in the city. I also started working on a much larger project which I will be sharing with all of you very soon. At times, this workload gets quite overwhelming — I still work a full-time job and collectively it feels like I am working three jobs at once. On some days, I would have all the room temperature butter on the counter, icing sugar spilled on the floor, and sprinkles rolling across my apartment floor, as I question myself what I am actually doing. It takes some time until I reach some sort of rational conclusion but I eventually get there. It is because nothing beats the feeling of creating the
Layer cake and the seeing you love and recreate that cake. I then clean up all the spilled sugar and I finish icing my cake so I can share it with you here.
This cake is my birthday cake but I also want it to be a celebration of what 2019 has been and what has yet to come. To me, nothing feels as festive as white cake layers studded with rainbow coloured sprinkles. Funfetti cake will always be my celebratory cake. To add more fun to these layers, I added chopped Oreo cookies to the batter, making this cake a hybrid between funfetti and cookies and cream. This way, I do not have to choose between two of my favourite cake flavours and the multicoloured add-ins represent all the different opportunities this year has to offer. I hope you find many reasons to celebrate this year as well.
