Butter Cookie Recipe No Mixer
I love desserts that you can whip up on short notice with only a handful of ingredients. Most drop cookies fall into this category, but this recipe for sugar cookies is even easier than most. These sugar cookies can be made completely by hand, with no special mixing equipment. This is possible because the cookies are made with vegetable oil instead of butter, which would require creaming to get the best texture from the cookies. Vegetable oil is hygroscopic, meaning that it absorbs moisture from the air. In cakes, this tends to result in a moister recipe that stays fresh longer than an all-butter cake might. In this cookie recipe, it results in cookies that are perfectly chewy in the center and have a very good shelf life.
The cookies have a great vanilla flavor and the clean sweetness of a good sugar cookie. A neutral vegetable oil, such as canola oil, will not impart any flavor to the cookies themselves. The cookies are a bit larger than average, which makes them very satisfying to eat. When they come out of the oven, they have a crisp outer edge and an addictively chewy center. Be sure not to overbake them or you’ll lose a little of that chewiness. That said, the cookies will soften a bit when stored in an airtight container, even if they spend an extra minute in the oven.
Although the ingredient list is not that traditional, the cookies have a very classic sugar cookie flavor to them and are delicious when served with coffee or milk. I can just about guarantee that they’ll be a hit with kids and adults alike. Since they use vegetable oil the cookies are completely dairy-free, so they’re a good choice for those with dietary restrictions, as well.

In a large mixing bowl, stir together sugar, vegetable oil, egg and vanilla extract. Add in 1/2 cup of flour, along with baking powder and salt, and mix until well-incorporated. Add in remaining flour and stir until a thick dough forms and all ingredients have been incorporated.Crispy edges, soft and chewy center, a bit of toffee flavor and loads of chocolate chips makes this one of the best recipes for chocolate chip cookies. Bonus-no mixer needed.
Begin by measuring out all ingredients and browning the butter in a light colored skillet. Next, add the remaining softened butter to the brown butter and mix together.
Add flour and baking soda and gently mix with a whisk or spatula followed by adding the chocolate morsels. Using a cookie scoop, place cookie dough on baking sheet that's been lined with parchment paper.
No Butter Chocolate Chip Cookies (cookies With Oil)
The butter/sugar and egg mixture needs to be whisked several times while resting in between stirring segments. This helps the cookies to achieve that hint of toffee flavor.
This recipe calls for browned butter. If you need more tips on how to brown butter then check out this post. If you don't want to brown the butter then melting the butter only will work but will have a slightly different taste.
Dark brown sugar helps to give these cookies their dark color and the slight toffee taste. Light brown sugar can be used in place of the dark brown sugar. It will have a slightly different taste as a result. I've made these with both types of sugars and I prefer the dark brown sugar.
Chocolate Chip Peanut Butter Chip Cookies
If you like walnuts or pecans in your cookies, then you can add ¾ cup to the dough when adding the chocolate chips.
When making browned butter, regardless if it's for chocolate chip cookies or not, it's important to not use a dark skillet because it's too difficult to see when the butter goes from being browned butter to burnt butter. These light colored skillets work great for browning butter. Using a cookie scoop will help to have the same amount of cookie dough for each cookie which helps with even baking. For the cookies that are pictured a 3 tbsp cookie scoop was used. This size can also be used with adjustment to the baking time.
To help the cookies be in perfect circle shapes these biscuit cutters do the job. As soon as the cookies are out of the oven and still very hot, place the appropriate size cutter over the cookie and move the cutter around the cookie several times in a somewhat quick motion, making sure the cutter is touching the cookie. The various sizes of biscuit cutters that are in this set is very helpful when doing this to the cookies.
One Bowl, No Mixer Cuppa Cookies
No mixer-Chocolate chip cookies can be stored in an airtight container. If the cookies need stacked, then place a sheet of parchment paper between them to avoid them sticking together and place a slice of bread in the container too. This helps the cookies from drying out and getting hard. The cookies will last for several days by doing this. If the bread gets really hard then throw it away and place a fresh piece in there.
Set aside a small bowl of morsels so you can top the cookies after they have baked. This helps the cookies to look even better and more like they came out of a bakery. These crispy butter cookies taste better than store-bought ones and are so easy to make. They are just 3 ingredients and don’t require any eggs. The cookies come out very crispy, buttery and sweet. They are perfect for gifting.
I love eating butter cookies, especially this time of year and I can never resist buying a few tins of Danish butter cookies. But most of the time I’m actually disappointed with the ones I buy. These homemade butter cookies taste so much better. They are so crispy, buttery and have just the right amount of sweetness.

Butter: I used unsalted butter but you can use salted if you want a little salt in your cookies. The butter needs to be softened before using, otherwise your cookie dough will not be the right consistency.
The butter and powdered sugar are creamed together at high speed for a few minutes until you have a light, fluffy mixture that is white in color and resembles whipped cream. The flour is then mixed in until a dough forms.
The dough is soft enough that it can be piped. I used an open star tip to pipe swirls that resemble my favorite Danish butter cookie shape (I made mine spiral swirls If you want it to look more like the ones in the tins, just pipe a circle).
