Broccoli Salad Recipe With Bacon! {the Best}
Fry the bacon, and transfer to a paper towel lined plate when done. Meanwhile, prep the other ingredients and add them to a large salad bowl. Spoon in some of the bacon grease to a small bowl that you’ll make the dressing in. Add the rest of the dressing ingredients, and stir until it’s smooth.
Pour the dressing onto the salad, add the bacon, and then toss until coated. It’s delicious right away or chilled for a few hours to let the flavors meld some more.

I’ve been making this Broccoli Salad for years now. My friend, Julie, shared it with me at a potluck get-together. Of course, that was long ago, when our kids were small, busy bees and non-stop, leaving any time in the kitchen always abbreviated and rushed, so dependable, easy recipes, especially those that could be made ahead, were essential. Quick and easy make-ahead recipes were almost like precious gold to us harried parents.

It’s the perfect side dish to serve for a summer cookout, tailgating, Easter lunch, or a ladies luncheon. I’ve even enjoyed it as an afternoon snack. Delicious Broccoli Salad Recipe: No Fail Sweet + Creamy Dressing
I have to give credit to the ATK team for coming up with the brilliant idea to use avocado in place of mayo. Not only was that genius, but I loved the suggestion to chop up the broccoli stem and add it to the salad as well. Such a great way to prevent food waste.
Directions: Fill a large bowl halfway with ice and water then set aside. In a medium saucepan over high heat, bring 1-inch water to a boil. Place the broccoli in a steamer basket and place over saucepan. Cover, reduce heat to medium-low and cook until broccoli is bright green, about 4 to 6 minutes. Drain well and transfer to the bowl with ice water to cool for about 10 minutes. Drain again then transfer to a salad spinner and spin dry (or lay on a towel to dry). In a blender or food processor (I used a NutriBullet) combine avocado, olive oil, lemon juice and zest, garlic, and 3/4 teaspoon salt + 1/4 teaspoon pepper. Blend until smooth, about 30 seconds, scraping down sides of bowl as needed. Add broccoli to a large serving bowl then add the avocado dressing, cranberries, almonds, shallot and tarragon. Toss to combine then season with salt & pepper, to taste. Serve immediately and enjoy!
I wasn’t able to find fresh tarragon so I made it without. The salad is best served fresh as the avocado will cause it to brown if served the next day. You can prep the broccoli in advance and add everything else to the bowl, minus the dressing. Then when you are ready to serve, make the avocado dressing and toss to combine.

Guys. This broccoli salad really doesn’t look like much but I promise that it is… much. It’s simple but insanely flavorful. It’s definitely going to be one of my salads of the summer!
I think it’s safe to say that I have almost turned the corner on vegetables. There are times when I actually crave roasted or grilled vegetables. If you had told me this 10 (even 5?) years ago, I would have looked at you like you were crazy. But frankly, forcing myself (I have no other word?) to eat vegetables daily for the last few years has been a game changer.

Now, don’t get me completely wrong. I never want to eat vegetables over pizza. Or brownies. Or a grilled cheese. Never. At least not at this point.
But I have conditioned myself enough to know that during the week, I want to try to get in as many veggies as I can. I make all sorts of delicious meals for weeknights but I always make sure they are accompanied by vegetables.
Some weeks, this means that I make the same roasted vegetable multiple times in a row. You won’t find me near raw vegetables yet. But I do enjoy eating roasted or grilled broccoli, asparagus, kale, brussels sprouts, peppers and so on.
Favorite Broccoli Salad Recipe
I can attribute a lot of this fairly newfound love to blogging, and creating lots of different recipes. Using trial and error to find things I love (can’t imagine ever loving celery… EVER) and cook foods in new and exciting ways.
