Chocolate Cake Recipe Lakshmi Nair

They say excuses are a waste of time, your friends don't need them and your enemies won't believe them. I definitely consider Suma as a dear bloggie pal and I hope she doesn't mind this long over due post.

It was a while back[more than 2-3 months I guess] that Suma e-mailed me and asked me for a guest post on her blog. She even kept the window open asking me to post anything which fancies me, though I couldn't ignore the *hint* on Cake. Now come on, for some one whose blog is named Cakes and More, what else can you bake??

Many things kept me from posting this on time. But I wouldn't get into all that, better late than never. I wanted the Cake to be Chocolatey and believe me, this one's full of it. Fudgy and gooey, this one could almost pose as a Brownie and you wouldn't know the difference!! Perfect with a scoop of Chocolate Ice-cream with some Chocolate sauce on top with some toasted nuts. Ah, I could grab that plate and go into Chocolate Nirvana. Suma, here it is for you and I hope with this one I've made up for being such a Late Lateef!! I almost felt guilty eating this when I actually made it for you!!

For someone who is crazy about Chocolate Cakes, this is the perfect answer. It has an intense Chocolate flavor, elevated by the coffee powder added into it and the resultant cake is definitely a show stopper. It is good on its own but you could drizzle some Ganache on top or even a simple chocolate glaze. I wouldn't recommend icing this cake since it would make it much more sweeter and will take away from the chocolatey taste which is the backbone of this cake. I halved the original recipe and got an 8' round cake. You could double the recipe and bake it in a rectangular tray if you are baking it as a dessert for a party.

In a mixing bowl, mix together sugar, boiling water and coffee powder till the sugar dissolves. [If you are using granular sugar, it wouldn’t dissolve completely and that is fine]

In another pan melt the butter and add the chocolate, make sure the pan is on low heat. In about 2-3 minutes, it will melt completely and become a chocolaty mass. Switch off the flame.

When the chocolate mix is cool, beat in the flour mix little at a time-you could use a wooden spoon or a hand mixer.

This certainly more than made up for that wait ! Boy! Oh, boy Divya! I asked for a chocolate cake and did I get such a sinful, super-tempting one!! Thanks a ton, Divya, loved this gooey virtual slice and the awesome pics. I will shamelessly have a slice, OK, make that two or half the cake, when I am in Chennai.. oh... just to help alleviate that guilt;-)This is my first icing/frosting cake, technically (I've made a french chocolate pecan torte before). Though I bake cake often, its usually plain cakes and the reason…of the two of us, hubby & me, I love cakes. Hence the major chunk is consumed by me. Though the beautiful pictures of Icing cake on other blogs tempts me a lot, I refrain from the idea thinking about the additional calories :((

This time I've got a reason to make icing cake & don't feel guilty :) . It was my dear hubby's b'day a few days back. The special dish for the occasion varies according to his mood, he generally doesn't ask for cakes, but this time he said he wanted an icing cake. I was feeling so enthusiastic and started going through all my baking books and even bookmarked some, especially simpler ones, since I don't have much icing experience and didn't want the b'day cake to be a disaster :) . I became crazy with all the icing cake recipes flashing one after another in my mind (ya it happens at times, when I wanted to do something for a long time and finally when the time comes all the ideas will start dancing in my head ;) ). Around the same time one of our family friend's gave me two kutti (small) baking books ( chocolate cakes & cafe cakes) for reference and she said all the recipes in those two books were tried by their daughter and it came out very well. This helped me in taking one decision, that I will make a cake from one of those two books. Since it was a b'day cake I decided to go for chocolate.

Finally I found out the cake, hurrayyyyyyy :) The picture of this cake in that book looks awesome, it looks very moist and the recipe was a simple one, basic stuff, but looks extraordinary. And am happy that I selected that one, b'day boy enjoyed the cake so much and also the guests, that I packed some pieces for them too :)

Am so happy to take part in an event like this, I usually dont particiapte because, generally my cooking is not at all planned, it mainly depends on my mood. I visited her blog today and saw her reminder about the event and since I already have the cake post here, I thought I should participate :)
