Recipe For Elk Meatballs
When most people think of meatballs, they think of the classic: spaghetti and meatballs. While the classics are classics for a reason, meatballs are so versatile! You can switch up the ingredients, flavor profiles, etc. in an endless number of combinations. One of my favorite things about meatballs is that you can take a pound of ground meat and really make it go a long way. I prefer to grind my wild game through my #22 Big Bite Meat Grinder without any added fat. You might be surprised that meatballs can still stick together without added fat but with a good binder like egg and breadcrumbs soaked in milk, these meatballs stick together well and are very tender and moist!
This meatball recipe is fairly simple, but the magic is in the gravy. The stout beer adds a dark, rich flavor and is a perfect pairing with the earthiness of the mushrooms and thyme. Add some half and half to make it creamy and it becomes the perfect sauce for some delicious meatballs. These meatballs can be served a variety of ways. You can serve them on their own with some bread for dipping in the gravy. Or you can serve them over egg noodles, mashed potatoes, rice, or your favorite grain. Whichever way you choose, you’ll have a flavorful and comforting meal that’s sure to fill you up!

Elk Swedish Meatballs • Primal Pioneer
If you’ve never had elk meat, you are really missing out. It is mild yet distinctive in flavor and an excellent source of lean protein. I like to describe it as delicious, juicy and tender. It really is at the top of the scale when it comes to wild game meat and it doesn’t take much to prepare, generally just a little salt and pepper. Ground elk is perfect for these elk meatballs with a sweet & spicy sauce for dipping.
Luckily, we had a successful hunting trip last year and have had plenty of elk meat in the freezer to pull out when we get the craving for a flavorful steak. In addition to some amazing steaks, we also have some ground elk that we have used mostly as a ground beef substitute, either for taco meat or burgers. To try something different, we decided to use some of our ground elk in this recipe to make elk meatballs with a side of sweet and spicy sauce for dipping.
Since elk is such a lean meat, we mixed the ground elk with a little Italian sausage to give these elk meatballs some additional flavor and keep them from drying out. Toss in a few seasonings and that’s all you need to have some perfect little bite-sized appetizers ready for your next gathering.

Ok, now on to the sauce. Don’t get distracted by the beautiful hand model in the picture. This sauce is sweet, tangy, slightly spicy, and the perfect compliment to these elk meatballs.
