SEASONINGS Onion and garlic, Italian seasoning, salt, & pepper keep this beef soup savory with a simple and hearty flavor. This recipe uses dry spices, if adding fresh, stir them in with the beans and corn.

It’s safe to say I have a thing for vegetable beef soup recipes. One of the all-time reader favorite recipes, that happens to have hundreds of 5 star reviews, is this Hamburger Vegetable Soup.

Vegetable Beef Soup (loaded With Fresh Veggies!)

This easy to make vegetable beef soup, that’s made with ground beef, is a one pot recipe that is total comfort food and made with some easy ingredients like frozen vegetables, dried seasonings, and lean ground beef. 

This quick version of vegetable beef soup has two secret ingredients that sound odd (trust me!) but they give this soup so much flavor. You will only need simple ingredients like frozen vegetables and ground beef to make this soup. 

Ground Beef : Brown and crumble the ground beef with the chopped onion, garlic powder, and basil. Drain the excess grease from the pot. 

Vegetable Beef Soup (classic, Stovetop Version)

Simmer : Bring the soup to a boil. Once boiling, reduce heat and let it simmer for at least 20-30 minutes before serving. 

There are a few ways that you can change up this hearty soup recipe. Here are a few ideas and things I have done.

1 cup + 3/4 cup (1 3/4) is the serving size for the calories listed. That is a big serving for kids, so if you are feeding a family with young kids then there is no need to double the recipe. If you are serving 5 or more adults, then you may want to double the recipe. There are 6 in my family and we always have plenty of leftovers of this soup. At least enough for 2 lunches.

I have only ever used the full-salt beef broth in this recipe. I worry that if you use the reduced-salt (50% less sodium) then you may find the soup very bland.

It’s perfectly hearty and filling thanks to the tender chunks of protein-rich beef and abundance of nutritious vegetables. Plus it’s a versatile recipe so feel free to replace veggies with others you may have on hand.

After simmering for an hour on the stove top this soup has such a delicious rich flavor and the beef is so deliciously tender. This is a perfect comforting fall and winter soup but when you’ve got lots of vegetables to use up in the summer this is the recipe to make!

Crockpot Vegetable Beef Soup Recipe (+video)

Note that the soup will be a little brothier than what’s pictures, I like to remove some of the broth so you can see the ingredients in the soup. But with that said you can use less broth if desired or even simmer the soup uncovered during cooking (just go easy on the salt).

Heat 1 Tbsp olive oil in a large pot over medium-high heat. Dab beef dry with paper towels, season with salt and pepper then add half of the beef and brown about 4 minutes, turning halfway through.

Add another 1 Tbsp oil to now empty pot then add onions, carrots, and celery then saute 3 minutes, add garlic saute 1 minute longer.

How To Make Hearty Vegetable Beef Soup

Pour in broth, tomatoes, browned beef, basil, oregano, thyme and season with salt and pepper. Bring to a boil then reduce heat to low, cover and simmer, stirring once or twice throughout, for 30 minutes.

Add potatoes then continue to simmer, covered, 20 minutes (you can also add green beans with potatoes if you like them very soft).

This can be made in the slow cooker but you’ll still want to start out by browning the beef, then sautéing the carrots, onions, celery and garlic. You’ll pour both of those mixtures into a large slow cooker along with everything else minus the frozen veggies. Cook on low until beef and potatoes are tender, about 6 – 7 hours, then add frozen peas and corn and heat through.

Crockpot Vegetable Beef Soup Recipe

This is such a versatile recipe. Ground beef could even be use here in place of the beef stew meat. If going that route though you won’t need to simmer as long so skip the first 30 minute simmering and jump right to the step of adding the potatoes.

Soup isn't just for the chilly days. This soup is the perfect way to use up all those summer veggies and those tender chunks of beef add such a delicious flavor. A hearty soup that's sure to satisfy, and you'll love the left overs!

I’m pointing this out to say – right here at the TIP TOP – there is not a definitive only and best way to make vegetable beef soup. The recipe I’m going to share with you is how I make mine.

I’ve learned a few things about making homemade soups over the years that I’ve included in this recipe because I think they take soup from good to great and I hope you’ll consider trying them

Divine Vegetable Beef Soup

These are the vegetables that my family likes best. Me personally? I want some cabbage and maybe some okra in mine but my Canadian husband draws the line at okra. I also like barley. I don’t remember Mama putting potatoes in it when I was growing up (I’ll have to ask to confirm) but that might just be because we rarely had potatoes on-hand since Daddy was such a huge rice eater.

Since I cannot STAND them, I don’t add English peas. Those little green globs can all go rot in a swamp for all I care. Husband feels the same way soooo… my soup ain’t got no peas! If you love them, toss some in! p.s… I always feel the need to specify that I don’t like English peas because I love all the other peas!

I really love Hamburger Vegetable Beef Soup made with ground beef as well. I like the texture and there’s probably some grade school nostalgia going on there too. I literally cannot
