Rava Kesari is a popular sweet dish or dessert from South India. It is made with rava (sooji or semolina), sugar, ghee and dry fruits. Rava Kesari is so simple to make that it is often made for neivedhyam on auspicious religious occasions and on special occasions as well.
Rava Kesari is so close to my heart as it is one of the first sweets that I learned to cook on my own and struggled to master during my initial days of cooking.
I love a good kesari that spreads by itself when we place it on a plate, with a grainy texture. Making such hotel style rava kesari is easy and possible with enough practice.

The word ‘kesari’ means ‘saffron’. Since this rava sweet is made by adding either saffron or orange food colour, hence the name, Rava Kesari.
It is easily one of the best and easiest sweets to make from South Indian Cuisine. It takes very few ingredients and time to cook this sweet.
Rava Kesari (Sooji Sheera) is often made duringfestival seasons like Diwali, Navratri pooja, or for any special occasions at home like birthdays, engagements and most especially for ‘girl seeking function' (ponnu pakkara function).
Rava Kesari Recipe: How To Make Rava Kesari Recipe At Home
Rava: It is known as ‘Sooji’ in North India and cream of wheat in English. Most commonly, bombay rava is used to make the kesari.
Ghee: We add desi ghee to make this sweet aromatic and to get a perfect consistency as well. Ghee is called clarified butter in English.
Water: We add water to cook the rava fully, but we can also make rava kesari with milk, which will make it even richer.

Other ingredients: We add dry fruits like raisins and nuts like cashew nuts and cardamom to flavour the kesari and orange food colour or saffron to get the colour.
9. The mixture will loosen & become watery. Cook until the ghee is absorbed and the kesari comes to the dropping stage.
4. Meanwhile, on another stove, mix together water and sugar in a saucepan. Cook till the sugar dissolves completely. No need for string consistency.

5. Add food color and cardamom to the roasting rava. Pour the steaming hot sugar solution over the rava and mix once.
6. Immediately close the lid and place the weight in the vent valve. Switch off the stove. Leave the cooker undisturbed for at least 20 mins.
When I went to my SIL's place, I shared this method with her, and she did not want to bring out her jumbo 10 liter cooker to make just 1 cup kesari.

So after mixing the sugar solution with the roasted Rava, I transferred the entire content into a hot pack (hot case) and waited for the same time, and it worked out fine.
The water should be boiling hot to get the hotel style rava kesari consistency, which is grainy and soft at the same time.
If you add sugar before the rava is cooked, then it will not cook properly afterwards and the texture of the kesari will also be crumbly and hard.

If you get small balls in the kesari after adding sugar, keep mixing the kesari well. It will dissolve on its own after a while.
When you swipe the ladle through the kesari in the pan, both sides must stay put without coming together quickly. This is the right stage to switch off the stove.
If you take the pan off before the right consistency, the kesari will be sticky and will feel like eating a paste. If you cook beyond this stage, the kesari will harden into a block after it cools down.
