Sweet Potato Flour Paleo Recipes

These simple Sweet Potato Crepes are made with sweet potato flour, eggs and sweetened with a little maple syrup. They are gluten free, Paleo, nut free, dairy free and easy to make!

If you know me, you know I love experimenting with different/unique Paleo flours. And today, I'm introducing you to sweet potato flour.

Not only is this a healthy, whole food flour, but it is naturally gluten free, Paleo and Vegan friendly. It's less absorbent than regular flour, meaning you don't need as much liquid when using it in a recipe. This flour also works well in both sweet and savory dishes.

I wasn't sure how well sweet potato flour would work in a crepe recipe...but these crepes have been a huge success! I've made them over and over and the whole family loves them. So yes, this is a kid friendly crepe recipe!

I know crepes can be intimidating. However, this crepe recipe is easy and they actually hold their shape. You can make thin, delicate crepes that turn out perfect each time.

Only four ingredients are needed to make these crepes. However, I added some cinnamon and salt for flavor. (Totally up to you if you keep those ingredients or not.)

And let me tell you, I've had my fair share of crepe failures. You know, when the batter doesn't hold together or you go to flip them and the entire crepe just falls apart. Frustrating!

But, I have a few important tips for making crepes. These tips result in the perfect crepe: one that is thin but holds together and doesn't stick to the pan.

First, set your pan on the stove top and set heat to medium. Add a small amount of oil (such as coconut oil) to the pan.

Next, gather the necessary ingredients. Whisk together the eggs, maple syrup, and plant based milk (or water). Then, whisk in the dry ingredients: sweet potato flour, cinnamon and salt.

Pour about ¼ cup of the batter onto the preheated frying pan. Carefully grab the handle of the frying pan and rotate the pan to spread out the batter. Spreading the batter makes for a thinner crepe.

**I used a large (11-12) frying pan for this recipe.  If using a small frying pan, you'll want to use just 2-3 tablespoons batter per crepe.This Hearty Paleo Sweet Potato Bread is delicious with just about anything!  It’s moist and flavorful and great as a sandwich bread, toasted with breakfast or as a quick afternoon snack with your favorite nut butter.  It’s versatile, kid friendly, and easy to make!  Grain free, dairy free, Paleo.

The major reason I went totally nuts while creating this recipe is that I wanted it to be different than anything I’d tried before.  A cross between a fruit/veggie quick bread and a sandwich bread.  A bread that you could eat on it’s own, make a sandwich with, or toast and top with poached eggs, butter, or, really anything you’re little grain-free heart desires.

I wanted this bread to be all the things a bread could be.  I wanted it to be fully Paleo plus include sweet potato in the ingredients.  Dream, fixate, execute, try again 4 times.  That’s the way it goes sometimes, but let me tell you – it was worth it for this hearty Paleo sweet potato bread!

Hearty Paleo Sweet Potato Bread

To – and in two of my loaves I used a regular orange sweet potato, baked, mashed, and drained of excess water.  BUT since Japanese sweet potatoes have a very low water content and less-sweet flavor, they definitely contributed to the texture and flavor of my favorite loaf.

I’ve been noticing them pop up in more and more “regular” stores around me, but, you will definitely find them in Whole Foods or an Asian market.   They have reddish-purple skin and white inside, and, oh yes, they are also AMAZING made into fries.  Just saying!

To “test” this bread after baking, all 5 times, I ate a whole lot of it in all different ways.  I ate it on it’s own – yum.  It has a moist enough texture and mild sweet savory flavor that I really liked.  I ate it toasted with my favorite Kerrygold salted butter, and, HECK YES!

I also ate in with almond butter and jelly (my kids loved it this way) and with cold cuts as a sandwich.  ALL GOOD!  Lastly, about 3 mornings in a row I toasted it for dipping in my sunny-side up eggs.  Let’s just say it’s quite easy to get addicted to this stuff with how versatile it is.

So, let’s get started!  My last note on the recipe is to make sure that if you DO wind up using an orange sweet potato (or store bought puree), try draining out as much water as possible from the puree/mash by squeezing gently with thick paper towel.

Maybe a little cumbersome, but, it will help the bread rise better as I experienced.  It’s still a nice moist bread, and if you find it to be too moist for you, you can always toast the individual slices.  I will stop talking now since it’s clearly time to start baking – okay, GO!

*I highly recommend using a white or Japanese sweet potato if you can since they are starchier and have less water content - the bread will rise better this way. You can bake your potato the day before and scoop out the inside for the recipe.

. If I am baking something at high heat, I typically add a few (whole) sweet potatoes to roast alongside. A roasted sweet potato, plain or with assorted toppings, is my anytime power meal or snack.

The sweet potato mash can be prepared by steaming, boiling, microwaving or roasting whole sweet potatoes. All optionswork, but there are some differences:

The sweet potatoes whole produce the sweetest, most flavorful mash. It is all about the caramelization and concentration flavors as the potatoes roast. Microwaving (whole) runs a close second for flavor.

I used a small cookie scoop to make my cookies. If you are portioning the dough and rolling into balls, gently press (slightly) into the cookie sheet to flatten the bottoms (the cookies do not spread).

For added flavor and color, you can follow my lead and sprinkle the tops with a bit of cinnamon sugar (I actually used pumpkin pie spice mixed with coconut sugar).

Bake the cookies in the preheated oven for 17 to 20 minutes until they are golden brown at the edges and feel just set at the centers.

The cookies will continue to firm up as they cool, so allow them to cool completley on the baking sheet before moving them.

Store the cooled cookies in an airtight container in the refrigerator for 5 days, or the freezer for up to 3 months.

Sweet potatoes vary in their moisture and starch content (even more so depending on how the sweet potatoes are cooked). Be sure to add no more than half the amount of water at a time until a cohesive, but still stiff dough, is achieved.

An equal amount of the granulated sweetener of your choice can be used in place of the coconut sugar. An equal amount of liquid sweetener (e.g., maple syrup) can also be used (decrease water by 1 to 2 teaspoons)
