Recipe For Sweet Potato Lefse

This sweet potato flatbread only takes three ingredients! It does not require yeast or kneading and it is incredibly easy to make. It stays soft, tender and flexible making it perfect for sandwich wraps and if you roll it very thin, it can be used as a tortilla.

Did you know that sweet potatoes can have orange, yellow, or purple flesh? In America what we usually refer to as an orange yam is actually a sweet potato. The deeper the orange color, the more beta-carotene. The flesh of the orange sweet potato has more beta-carotene than carrots.

A true yam grows in tropical climates, they have a rough, sometimes hairy skin that is difficult to peel and they arerarely seen in America. Those tropical yams are actually poisonous if eaten raw but are safe when cooked.

That’s it!! What kind of magic is that?! You might be skeptical that you don’t need more ingredients to make a fabulous flatbread but trust me, this is all you need.

The secret to success is all in the technique. After you cook the flatbread, stack them on top of each other and cover them with a kitchen towel. That will trap in the heat and “steam” them as they cool down. This is the critical step to keeping the flatbread soft and flexible. Don’t skip this step.

Since it is so soft, they are perfect for sandwich wraps. If you roll them very thin, you can use them as a tortilla. You can serve them with stews and curry to use them as a dipping bread.

Get adventurous and cut them up and fry them in oil to make sweet potato tortilla chips. Slather them with Pizza sauce and top them with cheese to make a quick pizza.

The uses for this flatbread are endless but honestly, it is so good you can enjoy it plain… no butter required. They are loaded with flavor!

Sweet potatoes are fat-free and if you cook the flatbread on a non-stick skillet, you can make these with virtually no added fat. We used this16 inch nonstick electric skillet and cooked two at a time to make quick work of finishing them. However, you don’t have to cook them all at once.

The dough keeps well for 4 to 5 days in the fridge. Just seal it in an airtight bag so it doesn’t dry out and then you can make fresh sweet potato flatbreads throughout the week.

Sweet And Salty Curry Roasted Sweet Potatoes

If you use gluten-free flour, it will make them more delicate and difficult to work with and the dough will tear easily as you transfer it to the skillet.

To solve that problem we slid one of these flexible cutting matsunder the flatbread and transferred them directly to the skillet completely intact. This technique works great with other flours that are lower in gluten as well, like spelt, einkorn, and whole wheat.

We made this flatbread by combining flour, salt, and hot mashed sweet potatoes. There is enough moisture in the sweet potato that additional water is not needed. The three ingredients are stirred together and divided into a log and cut into equal sections.

Each section is shaped into a small ball and rolled thinly, then cooked in a dry skillet for a minute, flipped and cooked another minute and BOOM! It is done! Watch the video to see how easy it is to make.

You can re-heat the flatbread in the microwave or on the stove top. Make sure you don’t over-cook them when it is time to re-heat or they will get tough and hard.

To re-heat them in the microwave, wrap them in a towel and zap them for a few seconds at a time. The microwave has a tendency to get bread products tough if you cook them too long so watch them carefully. You can even get the towel slightly damp which will hold in some steam and help keep them soft as you re-heat them.

If I want a bit thicker flatbread can I just not roll them as flat and bake cook for a little longer?

Yes, you can make them thicker and cook them a bit longer but you will want to turn the heat down a bit or the outside will burn before the inside finishes cooking.

I have jars full of dehydrated and powdered sweet potatoes. How easy it will be to add a bit of hot water to reconstitute them, add the flour and salt, and make these quickly! I am growing two dozen sweet potato plants and expect a harvest of a couple hundred potatoes this fall to dehydrate and powder. Sweet indeed! Thank you!

@Barbara, not sure you’ll see this but tell me more about your dehydrated and predated sweet potatoes please! Did you make them yourself and what do you cook with them?

I haven't tried this with chickpea flour. I would expect chickpea flour to make the bread pretty difficult to work with and it will absorb more moisture than regular flour. If you try it then roll the dough out onto some parchment paper and use the paper to transfer the flatbread dough to the skillet. That will prevent it from tearing when you transfer it.

I’ve made this several times and it’s really good!!!! Now I’m wondering if I can make them with almond flour instead of wheat flour?!

They will be very fragile and fall apart easily if you use almond flour. It can be done but they will be pretty difficult to work with.Homemade sweet potato flatbread is a delicious 2-ingredient side dish! This oil-free and yeast free flatbread goes well with curry, duck or grilled meats!

Farm Fresh Feasts: My Mother's Lefse

They are made with white potatoes and are similar to Indian roti. We would eat them with butter and salt. On occasions they would be served with roasted duck and sautéed cabbage which is another delicious option.

Start off with boiling sweet potatoes. It will take about 7-10 minutes to cook them thoroughly. Peel them, dice them and place them in a small pot. Pour water in – just enough to cover them.

Drain the water, let them cool down a bit and mash them with a fork or potato ricer. Add flour and using your hands form into sticky dough. Dip this dough in flour and roll it into a sausage. Divide it into 8 pieces.

Lefse Recipe: How To Make It

Each piece should be rolled out thin. It will be sticky so make sure you dust your work top and each dough piece well.

Cook in a frying pan without any oil whatsoever. It will take about 2 minutes to cook each flatbread (about a minute per side). Medium-low heat is ideal. The bubbles will form but this is good. They help to cook the flatbread.

This sweet potato flatbread recipe is suitable for vegetarians and vegans as well. Those who don’t like or don’t have sweet potatoes can use white potatoes instead.
