Yesterday we spent the entire day (and night) at the Dutchess County Fair! I look forward to it every Summer, and definitely didn’t hold myself back from indulging in funnel cake, deep fried oreos, french fries, and chocolate covered bananas. Suffice it to say, I’m currently recovering from a fried food hangover! As I type I’m sipping on a green juice and dreaming of this healthy, flavorful pan-seared cod I made last weekend. It took about 40 minutes start-to-finish and is exploding with flavor thanks to fresh basil, juicy tomatoes, plenty of garlic, and a bright kick of white wine. It’s the kind of meal you can look forward to making and eating!

But it’s good to know that Cod and other lean fish are lower in omega-3 fatty acids than fatty fish like salmon.

This cod recipe couldn’t be simpler, but yet it’s a very tender and flavorful fish recipe! Just cook the fish in a pan on the stove, then baste with garlic butter sauce.

Quick & Easy Air Fryer Cod

Cod fillets are vertical cuts from the body (from thebackbone down to the belly). Cod loins are thick fillets cut from larger fish. If you replace cod fillets for cod loins in this recipe, please adjust the cooking time if your fillet is large.

In general, the main varieties of cod are Pacific cod and Atlantic cod but both are firm, mild and flaky. Cod is a popular fish that has lean protein (unlike Salmon, which is a very fatty fish) and it’s a sweeter white fish, meaning it doesn’t have a prominent fishy taste to it. It takes on seasoning really well so since this is cooked with garlic butter, this cod recipe will taste of garlic butter.

A good cod recipe should be flakey and moist. If your cod is tough or rubbery, that means you’ve overcooked it. Unfortunately, there isn’t much you can do to fix it but you could always repurpose the cooked cod into a stir fry or salad.

The easiest way to check for doneness is to insert a fork into the thickest part of the fish. Gently twist the fork at an angle; if it is cooked properly, this cod recipe should flake apart easily. Also, it will look opaque rather than shimmery and translucent once it’s cooked through. To be sure, check the internal temperature. It should be between 140 and 145 degrees F.

If you have frozen cod, you can thaw them overnight in the fridge. If you’ve forgotten to thaw them, you can place them (in a bag if needed) in a large bowl of cold water. Switch out the water whenever it gets to room temperature. It should take around 20-30 minutes for the fish to thaw, just like shrimp. Fish With White Wine Sauce

Cod is an easy fish to cook and there are several methods to choose from. You can bake cod, grill it, pan fry (sear) or even smoke it. My favorite is pan seared.

Why? The two biggest reasons are flavor and time. Pan searing adds more flavor than other options (think golden brown perfection) and it can cook in under 10 minutes on the stovetop!

Cod can be pretty mild tasting and it’s a versatile fish that adapts well to various flavors. Here we enhance it by browning in a hot skillet and finishing with an impressive and well balanced sauce.
