This stuffed portobello mushroom recipe is a new take on an old favorite. It seems that turkey taco filling is a bit of a thing around here, including my Turkey Taco Stuffed Sweet Potatoes (a reader favorite) and Turkey Taco Stuffed Spaghetti Squash. Now portobello mushrooms have joined the gang!

Ragu

Vegetarian Mushroom Stroganoff

These mushrooms are actually satisfying enough to make a great vegetarian main course, but they are also easily served as a side or appetizer. Either way, they are absolutely heavenly, and a dish I can definitely get on board with having on a very regular basis.

To use the garlic butter. Or you could serve it without the balsamic glaze (this is how my daughter chose to eat hers, and is pictured above). But, let me just say that the flavor combination they provide is divine! And totally worth the extra Points. Just consider it a minor splurge.

I tried this recipe with both a shredded, reduced fat mozzarella and a fresh, whole milk mozzarella. They both work well, but the fresh mozzarella just had a more luxurious, creamy taste to it, so that’s what I prefer. You can also use any kind of tomatoes you have on hand.

Chicken Marsala Portobello Mushrooms

Those who know me know that I have a thing for mushrooms. That meaty texture, earthy flavor and ability to transform any dish into something spectacular ranks them #1 on my veggie scale.

So, sometimes I take pity on myself and whip up a shroom-centric recipe that I can enjoy for lunch when I'm home alone. Some of my favorites are this Instant Pot Mushroom Soup, this Kale, Mushroom & Goat Cheese Quesadilla and a Warm Kale Salad with Caramelized Onions & Mushrooms.

Best Spinach Stuffed Portabella Mushrooms

In my mind, one can never have too many healthy stuffed portobello mushroom recipes, so I'm adding these Ragu Stuffed Portobello Mushrooms to my collection of oven baked portobello mushroom recipes and grilled versions.

For the sauce, I made a simple ragu, using lean group beef, crushed tomatoes, chopped veggies and herbs. Feel free to substitute ground turkey for the beef if you prefer.

While the sauce is simmering, scoop out the gills from the mushrooms, brush them with a little olive oil and roast in the oven until they start to become tender.

One important step...be sure to pour out any liquid from the mushrooms before stuffing them. Once the mushrooms are filled with the ragu, top with some grated mozzarella cheese and bake in the oven.
