My first job out of college was in Boston, in the financial district downtown. My local friends did their best to initiate this wide-eyed Californian into New England traditions of every sort, especially food.

Fish

We feasted on as many menu items as we could afford at the Union Oyster House and the No Name Restaurant, and $5/lb lobsters I would buy from the Italian fish monger across the street from where I lived in the North End.

The word chowder is thought to come from the French chaudiere, which is basically a large pot or cauldron used to cook stews like this. There are many regional varieties of chowder.

New England style chowder is white, with cream and potatoes. Traditional New England recipes call for starting out rendering fat from salt pork and then making a roux with flour.

For this particular fish chowder, which we all agreed turned out exceptionally well, we are using extra virgin olive oil and butter instead of bacon or salt pork. We are skipping the flour and are instead using cream and the starch from the potatoes to thicken the stew. In place of fish stock, we are using flavorful clam juice instead.

To freeze- cool the soup completely and place in an airtight container with a tight-fitting lid and freeze for up to 3 months.

To thaw- place overnight on the bottom shelf of the fridge. Often many foods can be thawed for a few hours at room temperature, but because this has fish in it, I highly recommend you use the overnight fridge method.

To reheat- place in a pan on the stove or in a microwave-safe bowl and heat until the soup is steaming and the fish and potato pieces are hot all the way through.

Note 1- It's traditional to use fish stock in any fish-based soup, but as I would almost never use fish stock more than a couple of times a year, I don't think it's worth buying and storing. This recipe works great with chicken or vegetable stock, but if you want to use fish stock then that is perfect too.

Note 2- Milk. This recipe uses whole milk. You can use skim milk or semi-skimmed just add in about ½ -1 tablespoon of extra flour in step 1 to ensure that you get a lovely thick soup.

A chowder is a type of soup that most often (not always) has a creamy base and is chunky in texture. There are a few variations of chowder: clam chowder, corn chowder, and of course, this seafood chowder!

I start by simmering the veggies in seafood or chicken broth for great flavor and then add in the seafood and cream to cook at the end! Chowders can sometimes be thickened using a roux and in the case of this seafood chowder recipe, the potatoes also provide quite a bit of starch to help it thicken it!

Thick

Seafood chowder is a complete meal on its own loaded with shrimp, scallops and fish.  We add in a side of Easy Homemade Buttermilk Biscuits or Cheddar Bay Biscuits to sop up any of the creamy goodness at the bottom of the bowl!

A wonderfulfish recipe for Easter – or anytime! Just imagine that moment when you dunk in a hunk of warm crusty bread…..

This is really just a Fish Soup but I like to call it a “chowder” because the immature child within believes it sounds a heck of a lot more interesting to say “we’re having Fish Chowder for dinner tonight” rather than just “fish soup”.

Well, whatever we think this should be called, it doesn’t matter! What matters is that it’s utterly delicious, and I think it’s a great easy fish recipe that’s a little different to the usual pan frying or baked fish recipesthat can be made with many types of fish.

“Meaty” firm types of fish are ideal for fish chowder, such as: Snapper, barramundi, tilapia, basa*, cod, ling, monkfish, marlin, latchet (gurnard), leatherjacket, Spanish mackerel, shark (flake), salmon.

Avoid delicate fish such as whiting, garfish, John Dory, flat fish (flounder, sole) and flathead as they tend to fall apart in soup.

Avoid lean fish likeSwordfish, tuna, kingfish, normal mackerel. These tend to be a bit dry unless cooked with care if it’s not the super fatty bit like the belly which is hard to get outside of Japan! So best not used in soup.
