Recipe Breakfast Casserole Bacon Sausage

Easy to make Breakfast Casserole with shredded potato hash browns, sausage or bacon and mozzarella cheese! Perfect with a quick and easy hollandaise sauce.

Loaded with green bell peppers, Roma tomatoes and onions, breakfast casserole is so easy to make and perfect for the holidays! There’s nothing easier than throwing all of your ingredients in a baking dish and have the oven work its magic.

I can’t think of anything easier for a holiday breakfast or brunch than a breakfast casserole. Prepare it the night before to bake it the morning of for the easiest breakfast to feed a crowd!

Easy Make Ahead Bacon, Sausage Or Steak Hashbrown Breakfast Casserole Recipe

The all important component in this casserole has to be the egg base. You want a creamy mixture that won’t dry out in the oven, plus a delicious veggie medley to provide flavours. To make it deliciously creamy, use milk plus a little heavy cream (thickened cream).

You can use bacon; a bacon/ham mixture (as we did here) OR sausages. Any sausage works well here: breakfast sausage, turkey, chicken, beef, mild Italian or pork. Or add in

Crockpot Breakfast Casserole

1. Choose on your desired meat fillings: sausages, bacon, ham or a combination! If adding sausages and bacon, I suggest frying them up first before adding them to your egg mixture.

2. Choose on your veggie fillings: We love using green bell peppers (capsicum) and seeded, ripe Roma tomatoes. You can also add in corn kernels, red bell peppers (capsicum), sliced mushrooms and diced zucchini.

Layer your potato hash brown at the base of your dish, then pour in your egg mixture with all of the fillings. Top with cheese and bake your breakfast casserole until golden and bubbling!

Assemble the breakfast casserole as instructed in the recipe, then cover with foil and refrigerate overnight. When ready to bake, let sit at room temperature for 30 minutes before cooking.

This is my “make-ahead-feed-an-army” version of a country breakfast fry up that is one of my favourite things to order when I go out for brunch (especially if I had a few too many champers the night before). A ginormous plate loaded with eggs, sausage, bacon, potatoes and toast on the side.

Oh wait. I felt so guilty about not even addingsome cherry tomatoes or bell peppers (capsicums), I decided I better add some greens.

It has all the flavours of a country breakfast fry up, in casserole form. The bread under the surface is custardy and tastes like a savoury French Toast. Almost like anOmelette.

Overnight

My way of making breakfast casserole is a little different to the usual where the bread is torn into chunks and soaked in egg mixture.

What I like to do is use slices of baguette, soak in egg mixture and stand themupright in the baking dish, then drizzle with butter so the top gets lovely and golden.

But you know what? This will shock you! This breakfast bakeserves 8 and each serving has 645calories. Compared to a breakfast fry up which typically has over 1, 000calories

Breakfast for an army! Great for making ahead AND it reheats well too. Tastes just like a country fry up breakfast with all the essentials - bacon, eggs, sausages, potatoes and bread! This serves 6 very generously, or 8 (normal servings).

1. You can use any sausage you like. In Australia, I recommend avoiding the very cheap BBQ sausages you can purchase at supermarkets (the pale pink ones). They are mostly fillers, not meat.

Seriously, there is nothing NOT to love about a make ahead casserole. For starters, they’re easy. It requires zero brain power in the morning. Like a robot could do it. Wake up, brush teeth, insert casserole into the oven. But don’t forget to turn the oven on!

It also minimizes stress and rushing around in the morning. I don’t know about you, but sometimes I start to feel like a line cook making a different breakfast for each member of the family. With the casserole, everyone knows what’s for breakfast before they even go to bed the night before. No complaints, no special requests.

4. Store: Pour the mixture into the prepared baking dish and cover. Place it in the refrigerator for 8 hours or overnight.

5. Bring to room temp: Remove casserole from the refrigerator 30 minutes before baking and let it rest on the counter. While the casserole sits, preheat the oven to 350°F.

I love this casserole because it is packed with eggs, meat, and bread. It’s like getting a whole breakfast in one slice. You’ve got the eggs, the breakfast meat, and the toast on the side.
