Popcorn Cereal Bar Recipe

In fact, I don't know what I'd do at snack time if I didn't have some homemade or store-bought granola bars on hand to feed my kids.

Some of our favorite granola bars currently are these No-Bake Granola Bars, these Oatmeal Date Granola Bars and of course, today's recipe for Chewy Homemade Popcorn Granola Bars!

I think the popcorn is the star of the show when it comes to these homemade granola bars. It adds the best flavor and texture!

Peanut Popcorn Bars

If you don't have a hot air popcorn machine, don't worry! Neither do I. I'll share how I'm still able to pop my popcorn at home without one below.

Additionally, these popcorn granola bars can easily be adapted to use whatever dried fruit, nuts and nut butter you have on hand and I'd love to hear what combinations you all come up with!

Granola bars are so fun to make at home, because you can always switch up the mix-ins and create delicious new flavor variations every time!

Simply put about 3-4 tablespoons of un-popped popcorn into a paper bag, close the top of the bag by folding it over 1 to 2 times.

Then microwave the bag on high. After about a minute or two the popping of the popcorn will become less frequent and you'll know the popcorn is done when you can count 3 seconds between pops.

As soon as you can get to three seconds between pops, stop the microwave. You don't want to over-microwave the popcorn or else it will burn.

Gluten Free: Obviously, if you want your granola bars to be gluten-free, you need to ensure that all of the ingredients are themselves gluten-free.

We are starting to prepare for the kids heading back to school. That means sorting uniforms, realising that they all need new shoes, finding their lunch boxes, buying stationary, checking how many holes are in there school bags and for us, this year it means 3 kids at 3 different schools! It is going to be an interesting time for sure.

It can also be an overwhelming and stressful time of year and of course an expensive one, especially being so close after Christmas and the summer break. Many families struggle with the start of a new year. I try and organise as much as I can in early December, it may seem early but it means I can relax over the summer knowing I have the essentials in place such as uniform and shoes and I know what is coming if there is anything I miss.

Lunch boxes can be a minefield now. There are so many regulations and allergies to be mindful of but it is becoming the norm to now have plastic-free and nut-free lunchboxes now in many early childhood centres and schools around the country. This recipe was born from wanting to give the kids bars that they love, will eat and that meet the nut-free requirements. I also wanted to make popcorn bliss balls but without the rolling part! Plus these bars are super easy and I can make variations to suit even the fussiest one!

For this recipe the base is just two ingredients, Act II Microwave Popcorn and honey. Then you can add a variety of flavours to this, we have chosen three variations to share with you but I am sure you can come up with many more! We have Apricot & Coconut, Cranberry & White Chocolate and Sultana, Pumpkin and Sunflower Seeds.

No Bake Cereal Bars Beat The Heat

These bars can be stored in the fridge or in the freezer to last longer. I have made these several times now, they never turn out the same, so some are softer than others, some are crumblier or harder. This is down to the ingredients I add in and also the cooking time for the honey, longer will make it harder but you do not want it too hard!

To make my popcorn bars you will need popcorn, butter and honey. I use vanilla to add a little additional flavour. You can then choose to add small seeds such as hemp seeds or chia seeds to add a little more plant based goodness to the popcorn bars.

No Bake Peanut Butter Cereal Bars

Below are illustrated step-by-step instructions to make my energy bars, if you prefer just the written instructions then head straight to the printable recipe card below.

Step one: If you are not using premade popcorn you will need to pop your popcorn kernels. Follow the packet directions or you can learn how I pop my popcorn on the stovetop in my cinnamon popcorn recipe. Line a small square/rectangular cake or loaf tin with baking paper.

Step two: In a large saucepan melt the butter and honey. The melted butter and honey mixture will foam and will begin to darken in colour as you continue to heat it. As you heat the butter and honey will form a caramel, you will know it's ready when you can draw a spatula through the mixture and you will be able to briefly form a channel. 

Step four: Remove the caramel from the heat, stir through the vanilla and then stir through the crushed popcorn and seeds if you are using them.

Step five: While the popcorn mixture is still warm, use a spatula to press the mix into the bottom of the prepared pan.

Step six: Allow the popcorn bars to cool in the tin. This can you can do this on the bench or more quickly in the fridge, remove from the loaf tin and cut into bars.

Step eight: Store in an airtight container. I would recommend storing the popcorn bars in the refrigerator, especially if you live in a warm climate. Out of the fridge, the popcorn bars will be crispy and crunchy, they will be softer and chewier if stored in a warmer environment.

These popcorn bars are nut free so are suitable for school, popcorn can be a choking risk for young children so I wouldn't recommend them for preschoolers. My school-aged children take them in their lunchbox which is packed with an ice pack, and they love them.

These popcorn bars are based on making a quick honey caramel and then adding the popcorn, the process is similar to my seedy energy bars and my rice bubble slice.
