Easy Stuffed Avocado Recipes
Tuna stuffed avocados are a delicious low-carb, keto, Whole30 and paleo-friendly lunch or snack recipe. A simple combination of tuna salad and avocados, they’re easy to make, loaded with healthy protein, healthy fats and will keep you satiated long after lunch is over.
Tuna stuffed avocados are my new favorite lunch recipe – and I think they’ll soon be yours. I’ve always been a fan of tuna salad but recently realized that I just don’t make it nearly as often as I used to. Because I don’t eat much gluten-free bread (and I used to eat tuna salad on sandwich bread), my old recipe inadvertently fell by the wayside.
But it’s time to resurrect it don’t you think? And what better way than to use avocados as the new delivery mechanism for the most delicious tuna salad recipe.
Vegan Grilled Avocado Stuffed With Chickpeas
This tuna stuffed avocado recipe seems to tick a lot of dietary boxes – it’s low-carb, keto, Whole30, paleo, gluten-free and dairy-free. It’s a high-protein (23g of protein per serving) and high-fat recipe (of the healthy variety) that will keep you quite full. This means you’ll be less likely to grab carby, sugary and unhealthy meal options.
One of the things I love about this recipe (in addition to the bright, fresh flavor) is how easy it is to make.
Just add the tuna, mayonnaise, celery, onion, herbs, Dijon mustard, salt and pepper to a small mixing bowl. Use a fork to break up the tuna and thoroughly mix all of the ingredients together.
Easy Stuffed Avocado Recipe
Then use a large knife to cut your avocados in half and remove the seed. Add a few dollops of tuna salad onto each avocado half and that’s it – so easy. To eat the tuna stuffed avocados, just use a spoon or fork to scoop out a bite of the tuna salad with a chuck of avocado. It’s creamy, savory, herby and slightly crunchy from the celery and onion. Totally delicious.

Avocados are not only a delicious fruit, but it’s so versatile. Another fun fact: did you know that you can use avocados for baking? Yes, you can replace the butter and use mashed avocados. I’m very intrigued about that information, so I will bring you a recipe using avocados in my bakings. The first step to make these Stuffed avocados is to make the ground meat. I decided to use ground beef, but you can certainly use ground turkey. I use a few simple spices, and I can’t leave out the garlic. This ground beef is a straightforward recipe, and the best part is that you can even cook the meat ahead of time. Just place the meat in the microwave for a few minutes to warm it up and have it ready to assemble your avocados. It is also fun to let your loved ones do it themselves with toppings they like. I usually have the pico de gallo at the side, some containers with cheese, jalapenos for some heat, or any other toppings you think they will like.
As for the avocados, I like them just fresh like that. However, you can bake them for a few minutes or grilled them before stuffing them with the meat and pico de gallo. Either way, you decide to make these avocados will taste amazing.
Caprese Stuffed Avocados (vegan, Gluten Free, Paleo, Keto, Oil Free Option)
In a container, season the ground beef with 1 teaspoon of chili powder, 1 teaspoon of garlic powder, ¼ teaspoon cumin, ¼ teaspoon onion powder, ¼ teaspoon oregano, and 1 teaspoon salt.
Then, in a non-stick pan over medium-high heat, add 1 teaspoon of oil. Next, add the ground beef and let it cook for about 10 minutes, stirring occasionally.
To prepare the avocados before stuffing them, I remove the pit from the half avocados. I like to make a few cuts slicing the avocado; this is optional, but I have it very helpful when eating it.
Peruvian Stuffed Avocados Recipe (plant Based & Gluten Free!)
Place a few spoons of the ground beef on top, and place the stuffed avocados on a serving plate. Top with some Pico de gallo and other toppings you like. Some of my family members like to top them with some cheese and hot sauce. To give you a few ideas!

Peruvian Stuffed Avocados {smoked Trout + Hearts Of Palm}
First off (as shown above), we’ll start with a mixed medley of diced fruits and vegetables. I diced up cucumber, bell pepper, red onion, and jalapeno, and combined them with hummus to bind. It’s a cool and refreshing combination with a slight spicy kick. You can also add in a minced garlic or use flavored hummus for variation. To make raw, use this Raw Spouted Hummus!
Secondly, I just updated this Greek Quinoa Salad and had some leftover. I thought it would be a perfect stuffing for avocados and have it pictured here as well (see below).
Let this be a starting point for you. You can add or subtract whatever you wish. You can even double stuff them if you like!
