Easy Dinner Recipes For Beginners Mexican

Every night can be Mexican night with these 19 Easy Mexican Recipes! Everything from fajitas to guacamole, tacos to mole and a whole lot more. These simple crowdpleasers are perfect for busy weeknights and weekend entertaining alike.

What’s your favourite cuisine? I always find this a difficult question to answer – I love so many different cuisines: Greek, Middle Eastern, Italian and Spanish… But one of my all time favourites has to be Mexican food!

Over the years I have created many delicious and easy peasy versions of Mexican classics – as well as a few Tex Mex dishes (I have an obsession with chilli con carne) and some Mexican fusion food too (Fajita pasta, I’m talking to you!).

Easy Mexican Recipes (+ Dinner Ideas)

Here I’ve pulled together 19 of my all time favourite Mexican inspired recipes to share with you. I’m not promising authenticity (because when a traditional mole sauce takes a day to make, who has time for authenticity?!), but each of these recipes is easy, delicious and family friendly – which are the most important criteria for dinner IMHO!

For each recipe, I’ve included a link to the recipe, plus prep times, cook times and total times, so you can quickly and easily see which recipe suits your needs and the time available.
