My mom would make this dish in the slow cooker, and excitedly announce as we went off to school, “Beef on rice tonight kids!” to give us something to look forward to all day. Because we totally all looked forward to this dish. The beef was tender and juicy after cooking all day and it took very little effort to get it that way. It’s the most perfect comfort food dish.

But, let’s say you are sick of the slow cooker or you forgot to add your ingredients to it before you left for work or you just want to play with your new Instant Pot (there’s no shame in that), then this Instant Pot Beef Tips recipe is for you. It’s everything you loved about Beef on Rice except quickly cooked in your Instant Pot for (nearly) instant gratification.

I added a couple extra ingredients to this recipe (mushrooms, garlic, worcestershire) but you can skip them if you want and this recipe will be almost exactly like the Beef on Rice except adapted for the Instant Pot.

I admit, the term “beef tips” is kind of nebulous when you think about it, isn’t it? What constitutes the tip of some beef anyway? Well, I was curious myself so I did a little digging. It turns out that beef tips are not made from one specific cut of meat but rather can come from a variety of cuts. Sirloin, chuck roast, or another tougher, fattier section of meat is used. The butcher will likely have already cubed these up at your grocery store and labeled them as “stew meat” or “beef tips.” Any variety will work in this recipe as you’ll cook it long enough to tenderize the meat.

TO FREEZE: Let the beef cool completely. Place in a freezer-friendly container or bag. Frozen for up to 2 months. Thaw the beef in the fridge, then reheat it on the stovetop.

For this recipe, I use cubed beef. You can find it packaged and labeled as “stew meat” or “beef tips” in most grocery stores. If you can’t find it prepackaged section, ask your butcher for cubed top sirloin or chuck roast, which is less expensive.

Stew beef is often less tender than other cuts because it is what is left over after the steaks and roasts have been cut. I love to serve it with a side of fluffy mashed potatoes, sweet plantains, and homemade eggless dinner rolls. You can also serve it over egg noodles (or other pasta), rice, or polenta…YUM!

TOMATO PASTE: This ingredient is optional; however, it adds a nice extra layer of flavor to this dish, so I always add it.

BEEF BOUILLON: If you don’t have beef bouillon, you can use beef broth instead of water. In that case, you might need to add a little more salt. I recommend tasting and adjusting the seasoning to your liking.

I have been asked for this recipe for beef tips in the Instant Pot for a long time. I had it in the works and now I’m sharing with you! This is a delicious, easy recipe.

You can use any cut of beef for beef tips – tenderloin, sirloin or even chuck roast. If you use the stew meat that is pre-cut from the grocery store, it would be good to buy a chuck roast and cut it yourself (more economical, and you can cut larger chunks).

I most often use sirloin tip roast, and cut the pieces from that, usually in 2 inch chunks. Sirloin isn’t as expensive as steak tenderloin, and works well in this recipe.

The cook time is key to tender beef tips. The cartilage/fat needs time to break down and make the meat tender. So 20 to 30 minutes is ideal, depending on how large you cut the steak cubes.

The gravy that this pressure cooker beef tips recipe makes is rich and delicious. The red wine adds a lot of flavor, however you can use more beef broth if you don’t want to use the wine.

This gravy is so good over mashed potatoes! You could also serve it over rice, cauliflower rice or mashed cauliflower, or over biscuits.

If the gravy is not as thick as you want, in a cup, whisk together 2 Tbsp of cornstarch and 2 Tbsp of cold water until dissolved.  Turn on sauté again and when the sauce simmers, stir in the cornstarch slurry. Stir until thickened, then turn off the pot.
