I’ve been obsessed with the Kodiak pancake mix recently because you can make so many different recipes with it ranging from muffins to pancakes and waffles (like these Kodiak Protein Waffles), and the ingredients are wholesome too!

We were looking for some new muffins to add to our morning rotation and these blueberry protein muffins totally fit the bill.

These yummy muffins are light and fluffy, with a refreshing burst of blueberry and banana flavour in every bite, while also being kid and husband approved!

With 8 grams of protein and 3 grams of fibre per serving, these muffins are a great satisfying breakfast or snack option.

The kodiak mix is made from whole grain flours, whey protein isolate, wheat protein isolate and milk protein concentrate, while the additional fibre and protein comes from the blueberries, bananas, milk and eggs that are added to the mix.

These kodiak cake muffins only have 10 grams of sugar and most of it comes naturally from the bananas and blueberries, so you’re slashing about two thirds of the sugar while reaping the benefits of the added nutrients as well.

Once baked, let the cool completely. Store in the fridge in an air-tight container for up to three days or in the freezer for up to three months.

How many calories are in a Kodiak banana muffin? One Kodiak Cakes muffin has 99 calories, 14.1 grams net carbs, and 4.1 grams protein. Nutrition information is for a banana muffin with no toppings. The Kodiak banana chocolate chip muffins have 116 calories, 16.3 grams net carbs, and 4.3 grams protein each.

I recommend using the Kodiak buttermilk pancake mix because it’s one of their mixes that is lowest in added sugar. It has 2 grams of added sugar per half cup of mix (53g). These homemade Kodiak banana muffins with pancake mix contain less sugar than using the Kodiak muffin mixes.

You can find Kodiak Cake baking mixes at most major supermarkets in the U.S. They’re also available at Target, Walmart, Amazon, and big box stores like Costco.

Whole milk is best for this recipe, but you could also use 2% milk or unsweetened calcium-fortified soy milk. I would not use almond milk or oat milk because they contain less protein. Whole milk will provide a moister muffin, since this banana muffin does not contain a lot of fat otherwise.

You’ll also need an oven (of course). I highly recommend using a food scale for the dry ingredients whenever you make baked goods. Using volume measurement (with measuring cups) for flour or Kodiak mix can lead to inconsistent results. This is because the same weight of flour can be packed down into different volumes.

This is a small batch of muffins, so you only need to put 4 muffin papers in your muffin pan. Spray the muffin papers with cooking spray.

In a medium-sized bowl, stir the Kodiak Cakes mix, milk powder, and cinnamon together. In a small bowl, mix the mashed banana, oil, and whole milk. Pour the wet ingredients into the dry ingredients and gently stir.

Divide the Kodiak Cakes banana muffins batter evenly between the four prepared muffin liners. Top each muffin with chocolate chips (if using).
