Easy Snack Recipes For St Patrick'S Day

This fun snack recipe called Lucky Charms Marshmallow Treats has three ingredients and only takes ten minutes to make. While it’s not quite as magical as a leprechaun, it’s pretty close!

A variation of these Lucky Charms Marshmallow Treats is one of the first snack recipes that I made with my son. We practiced measuring cereal and as he got older he learned to stir the marshmallows and cereal together. We really enjoy doing quick activities like this together.

It doesn’t really matter what kind of cereal you use. These Reese’s Puffs Cereal Bars are another favorite. As long as the cereal sounds good with melted marshmallows do an experiment and give it a try!

Lucky Charms Cereal Bars are super simple to make. I actually have this recipe memorized and I can’t seem to remember much of anything anymore. So that means the recipe is EASY!

In a large pot melt 4 tablespoons of butter or margarine over medium-low heat. Then stir in 8 ounces of mini marshmallows until they are melted.

Remove the melted marshmallows from the heat and stir in 6 cups of Lucky Charms cereal. Stir well and then spread into a lightly greased 9 x 13″ pan.

If you really like the cute marshmallows in the cereal you (or your kiddo) can pick some extra marshmallows out of the remaining cereal and sprinkle on top. I like to wet my fingers to make it easiest to smooth the mixture out. Cut into pieces of your desired size and enjoy.

Most people think corned beef and cabbage or Irish soda bread when they think of celebrating St. Patrick’s Day, but I’m bringing the TREATS, you guys!

Decorative Bowls – It helps to have one or two St. Patrick’s Day themed bowls on the board that contain some of the treats, like the gold eggs or coins. Fill in the rest of the bowls with plain white, green, or gold bowls from your home.

Wooden Scoops – Small wooden scoops or cute spoons help dress up a board. I couldn’t find the exact scoop we used online, but most craft stores will sell them.

We always keep some on hand to refill after guests have made their first pass over the board, but leftover treats can also be packaged up into small goodie bags for guests to take home if you don’t like a bunch of candies tempting you in the cupboard.

We added the amounts we used here, but don’t bother measuring. Just fill your board until it’s very full and festive looking. Use more of your favorite ingredients and make sure to add lots of variety.

If you don’t have a board or sheet pan, you can easily use a roll of construction paper, which you can get in any color you choose. Tape the edges to your counter or table and then fill accordingly.
