Tresleche Cake comes from Spanish word which means three milks cake. It’s a sponge cake soaked in 3 different kind of milk evaporated milk, condensed milk and whole milk. A word of caution if you eat one slice of Eggless Tresleches Cake you may end up eating half the cake 😉 so be wary. I wanted a spongy texture without eggs so I used my own head and was quite amazed and happy with the result.
Is soaked in 3 different milk plus it’s given a royal cream icing. Later you could add some cherries, strawberries Or fruits you like. Cake is so moist you won’t need a tea Or coffee along. The cake by itself is filling and satisfying.
Eggless Chocolate Tres Leches Cake
Had a great weekend made some lovely food, had lovely food outside along with desserts like tresleche cake. The cake has inspired me so much I am gonna try some other flavors and other versions of it very soon.
1. Preheat oven at 180°C for exactly ten mins before baking. Grease the pan with oil and dust some flour over it. Tap the pan to remove and excess flour if any. You could use any pan of your choice.
3. Beat sugar, oil and vanilla essence until they blend into each other with a beater. I am too lazy to manually beat.

5. Fold wet mixture into dry ingredients into 3 batches gently. Mix baking soda with lukewarm milk. Give a nice stir fold into the above mixture. Pour the cake batter into the greased pan.
8. Combine all the ingredients mentioned above for soaking syrup. Pour Or drizzle half of it and spread on the cake. Give about 30 mins for the cake to absorb the syrup. I didn’t add rest of half as that much syrup was enough for my cake.
9. Place the cake in the fridge to chill. Beat chilled whipped cream with sugar. Pipe the whipped cream into the shape you desire or just spread them all over the cake. Chill for an hour more. I don’t have a pic for this one. Top with sliced berries, mangoes etc. Slice into triangles Or squares and serve the Tresleches Cake chilled.

4. I have added less sugar for my cake as the syrup is sweet else my cake will be too sweet. So if you like more sweet add more sugar for your cake I prefer less sugar.This eggless tres leches cake or three milks cake, is everything I need from a cake! Vanilla flavoured super moist, juicy sponge topped with a generous amount of whipped cream. It is a true delight! Oh, did I mention my eggless Tres Leches cake is made using whole wheat flour ? Makes it marginally healthier too! 😀 No whole wheat aftertaste either! You need to try it to believe it! 🙂
Tres Leches cake originated in Mexico and is always on the dessert menu in Mexican restaurants. Tres Leches in Spanish means ‘three milks’ which refers to the three kinds of milks the cake is soaked in. The cake gets drenched in a mixture of evaporated milk, condensed milk and some fresh cream. If that does not get you drooling!
Vegan Tres Leches Cake
The structure of the sponge is very important in a Tres Leches cake! The cake should be airy with many air bubbles to hold all that delicious milk sauce, but still not get soggy ! Can you guess my excitement when a whole wheat baking experiment resulted in exactly this texture?! I knew right then that it would make a wonderful eggless whole wheat tres leches cake! 😀
My whole wheat sponge is lightly sweetened, so that it does not get overly sweet when soaked in milk syrup. Without the frosting and the milk syrup, this whole wheat sponge makes a very good tea time cake!
Atta is Indian whole wheat flour. I use the sharbati variety of Atta in my baking. If you like baking with whole wheat, I would recommend buying Atta as it’s lighter in taste and develops lesser gluten than regular whole wheat flour resulting in a lighter crumb.
Chocolate Tres Leches Cake
To make your own almond flour at home, powder almonds and pass the powder through a sieve and use only the fine powder. Keep in mind to use the pulse mode to powder, so that almonds do not release oils.
To make your own evaporated milk, boil and simmer whole milk till it reduces to half it’s volume. For example, start with 2 cups of whole milk to make 1 cup of evaporated milk.
As this is an eggless tres leches cake, adding an egg replacer helps in adding some structure to the cake! I have tried making this cake using both Bob’s red mill egg replacer and good old flax seed powder with good results!
Eggless Rose Milk Cake / Rose Tres Leches Cake
Here is a picture to show what the sponge looks like using Atta(no added almond flour) and flax meal as the egg replacer. The result, as you can see is still very good. Makes a good tea time cake without the frosting.
Of course, not everyone has a weighing scale, when using measuring cups, I recommend fluffing the whole wheat flour to loosen it up, before measuring.
Mix the wet and dry ingredients only after the oven has preheated to 350F. This helps the baking soda remain in good strength as it goes into the oven.
Eggless Tres Leches Cake
Do not overmix the batter. This is true in any cake, but more true in eggless cakes. Gently mix the wet and dry until just combined.
This cake refrigerates well, as it is made with oil and not butter. It stays soft in the refrigerator. Do make sure to store in an airtight container, so that strange ‘fridge’ smells do not get into the cake! 😀
The cake can be made a day or two in advance, it will still be moist and this cake will not get soggy.

While I can’t do much about it, I try to feel festive by cooking all the special things that mom would make around this time.
I make plenty of Thandai powder at home during this season and make thandai at least twice a week. We also love thandai flavored desserts like this Gulab Jamun mousse with thandai and thandai butter cookies.

Eggless Thandai Tres Leches Cake Recipe
For those who are unfamiliar with the term thandai, Thandai is a traditional Indian beverage popular in the North Indian states of UP and Rajasthan and made especially for the festival of Holi. It has a cooling effect on the body and hence the name Thandai.
Once the masala is ready, mix it in hot boiling milk. Then let it cool and set it in the refrigerator for around 1 hour so that the milk absorbs all the flavors.

Eggless Rasmalai Tres Leches Recipe
Traditionally, a Tres Leches is made with eggs that incorporate a lot of air and make the sponge more capable of absorbing the milk.
I made the sponge using yogurt and baking soda- which is a perfect substitute for eggs! This makes the cake light and fluffy.
This milk mixture is made with 3 kinds of milk and infused with thandai flavors. Then infuse our cake with this thandai milk mixture.
Rasmalai Tres Leches Cake (vegan)
You can make the cake base ahead of time. Allow the cake to cool to room temperature then cover the pan tightly with plastic wrap and freeze the tres leches cake base for up to 3 months.
