You may have read my last couple of posts (Tortilla Salad Bowl or Eton Mess) in which I talked about becoming an ambassador for FareShare, a UK charity fighting hunger and food waste by redistributing surplus food from the food industry to local charities and communities projects.

Salmon Recipes For Picky Eaters To Try
As part of my work with FareShare I’m going to be creating some recipes using some of their most commonly redistributed food items. Today’s recipe is using fresh salmon to make a delicious kid-friendly creamy pasta dish.
The first step is to boil up some pasta in a saucepan. I’ve used bowtie pasta but any type of dried pasta shape is fine.
Next it’s time to create the delicious salmon and sauce. In a frying pan cook some onion and garlic in oil or butter and then add salmon chunks, frozen peas and stock cube.

Then add 100ml of the water that the pasta is cooking in to the pan. This will help create a sauce that will blend perfectly with the pasta and not be watery.
Serve straight away for a delicious and filling meal that the whole family will love. If you have very fussy eaters who don’t like fish, then try cutting it into smaller pieces before serving. When mixed with the cream sauce and pasta they will barely notice that it’s even there!

Making this salmon recipe is easy. I’ll walk you through how to cook salmon, and I’ll give you my tips for making the best tender and flavorful baked salmon.
The exact baking time will depend on the thickness of your salmon fillet. A one pound salmon fillet will take about 12-20 minutes to cook in the oven, at 400 degrees F. Begin checking on your salmon early and then you can always cook it more if it’s not done.
I like to serve a vegetable and a starch with this baked salmon. Some options for the veggie are roasted broccoli, air fryer asparagus, green beans or a spinach salad. Instant Pot mashed potatoes, roasted potatoes, Instant Pot baked potatoes, air fryer baked potatoes or brown rice are also perfect side dishes for salmon.

Do your kids like fish? Two of mine would eat frozen supermarket fish fingers and that was it. Seriously. Try as I might to feed them other mostly ready made fish dinners they refused.
When we started eating Clean one of the things I wanted to do was to introduce some more fish into the kids diets. I’m not talking about anything exotic like a mussel dish or anything (I’m a simple home cook!). Just regular, pretty simple fish recipes.
One of the first fish dinners I made from scratch was these homemade fish fingers and to my absolute amazement they all ate them. And then asked for them again. After that I got creative and started using fish more in my cooking :)
Easy Baked Salmon Recipe (healthy Family Dinner)
I use canned salmon for these mostly, unless I happen to have some fresh salmon I’ve bought on offer, but usually, it’s canned salmon and so that’s what I’ve used in this recipe. This also makes them a good pantry staple for those times you find yourself with some leftover mashed potato.
If I am making these salmon cakes for appetizers or for school lunches, I shape them a little smaller so that I get around 16 small patties.
Fresh salmon is expensive where I am, so this is my version of a budget salmon dish. I used canned salmon to keep within my grocery budget, but if you have fresh salmon, that works well too.

I would make them right up to the point where you fry them until golden brown and then let them cool down and put them into the fridge. When you then want to eat them, put them into a hot oven and finish them off as per the recipe.
Lunchboxes, they’re so easy to make and really lovely cold the next day with a twist of lemon. They also travel well and so are good sitting in a lunchbox until lunchtime.

So we know fish is good for us, but like I said before getting a fussy eater or even a non fussy child to eat a piece of salmon or other fresh fish in it’s natural form can be challenging to say the least!
But by turning them into these little crispy seasoned salmon pieces makes them slightly less daunting to kids who may already be familiar with things like fish fingers or chicken nuggets.

And by baking them in the oven, they make a healthier alternative to cooking them in a frying pan or deep fat fryer.
This recipe is also really easy to make. It literally takes 4-5 minutes to prep the nuggets and just 12 minutes to bake in the oven.
So simple and a complete meal ready in less than 20 minutes! This easy dinner would be perfect for a busy mid-week meal.
